Apple Cranberry Cinnamon Toasters Cookies

These yummy cookies certainly fit the bill!  With all the flavors of fall–cinnamon, apples, and cranberries–these cookies will be eaten up faster than I can say, “Cinnamon Toasters!”

When I was shopping at Food Lion recently, I picked up a bag of Malt-O-Meal® Cinnamon Toasters to incorporate into this recipe.  I was pleasantly surprised at the variety of Malt-O-Meal cereals available (I had to grab a bag of S’Mores as well!), such as Golden Puffs, Berry Bunch Crunch, and Frosted Flakes!  I was also impressed with the wonderfully low price per ounce.

And, of course, these Cinnamon Toasters taste amazing!  While I was making the cookies, Tad and I couldn’t stop snacking on them straight out of the bag.  I know this may sound silly, but I really love that the bag has a zip top.  I think this helps keep the cereal fresh and not stale for so much longer than boxed cereal!  Not to mention, there is less waste in the packaging when it’s just a bag and no box.  Gotta love that!Apple Cranberry Cinnamon Toasters Cookies made with Malt-O-Meal® Cinnamon Toasters #recipe | Feathers in Our Nest

Once I decided to make Cinnamon Toasters cookies, it didn’t take me long to figure out that dried apples and cranberries would complement the cinnamon flavor perfectly!  And, boy, was I right!  These cookies just melt in your mouth and you’re instantly delighted with the sweet dough, the cinnamon from the Cinnamon Toasters, and the fruity, tangy flavors of the cranberries and apples.  It’s a delicious combination.Apple Cranberry Cinnamon Toasters Cookies made with Malt-O-Meal® Cinnamon Toasters #recipe | Feathers in Our Nest

These cookies are easy and fast to make, and you could definitely try other mix-ins if you wanted.  I think white chocolate chips would be good, as well as dried cherries!

Serves: 3 dozen
Ingredients
  • 2 sticks butter, softened
  • 1 cup brown sugar, packed
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 Tbsp. vanilla extract
  • 1¼ cup Malt-O-Meal Cinnamon Toasters
  • 2½ cups all purpose flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ½ cup dried cranberries
  • ½ cup dried apples, diced
Instructions
  1. Preheat oven to 350 degrees.
  2. In the base of a stand mixer, combine butter and sugars together until light and airy. Add eggs and vanilla extract and mix well.
  3. In a mixing bowl, slightly crush (by hand) Cinnamon Toasters cereal. Add flour, baking powder, and salt and mix well.
  4. Add flour mixture to the wet ingredients and mix until combined.
  5. Fold in dried cranberries and dried apples by hand.
  6. Scoop onto a parchment paper lined cookie sheet (2 Tbsp. dough) and bake for 9-10 minutes. Edges will be light golden brown and centers will be set.
  7. Cool on cookie sheet for 5 minutes, then transfer to a cooling rack.

Perfect Cold Brew Iced Coffee

Perfect Cold Brew Coffee at Home! Easy DIY recipe using a French Press | Feathers in Our NestLately Tad and I have been experimenting with making cold brew iced coffee at home (ever since we bought a bottle of cold brew concentrate at TJ’s that was awesome), and we’ve figured out the perfect recipe!

You’ll need a French press coffee pot (ours is from here, but here’s a similar one) and some coffee beans.

Grind your coffee beans to a medium/coarse  grind.  Pour 3/4 cup coffee grounds in the bottom of the French press.

Add 2 1/2 cups filtered water and stir gently with a wooden spoon.  Place the lid on the French press but don’t push the plunger down.

Chill in the fridge for 12-24 hours (I like 18 hours), then plunge the filter down.

Pour the cold brew coffee concentrate into a jar or bottle for storage in the fridge.

Now the fun part!  Make your iced coffee by combining ice, cold brew concentrate, a bit of sweetener (if desired), and milk or water.

I don’t measure, but my guess is that I use 1 cup ice, 1/2 cup cold brew concentrate, 1 cup milk, and 1 tsp. maple syrup.  Liquid sweetener works best since you’re adding it to cold coffee.  If you don’t want to use maple syrup, you could make your own simple syrup to use.

Apricot Goat Cheese Bites

Apricot Goat Cheese Bites - easy & pretty appetizer! | Feathers in Our Nest

Last night I made these super simple appetizers for a porch party at a friend’s house, and I thought I’d share the “recipe” for apricot goat cheese bites with you today!  (Though I’m sure you don’t need my help figuring out what the four ingredients are!)

They’re just so stinkin’ cute, and they’re perfect for a party with the girls.  I’m always looking for new appetizers to add to my list of favorite recipes!

This recipe comes from the gorgeous cookbook, The Forest Feast.  The photos and watercolors in this book are to die for.

I do not have a green thumb, but I’ve managed to keep a pot of thyme alive on my back porch for three years now (nothing short of a miracle!).  All of the other ingredients can be purchased at Aldi or any other grocery store!

Ingredients
  • dried apricots
  • goat cheese
  • dried cranberries
  • fresh thyme
Instructions
  1. Place apricots on a platter. Top with a small ball of goat cheese.
  2. Add a dried cranberry and a bit of thyme.
  3. Serve immediately, or refrigerate until later!
