Granola Bites with Yogurt Drizzle

I love finding new wholesome snacks to enjoy, and I love it even more when I can prep them early in the week to enjoy all week long!

Today I want to share with you two delicious flavors of granola bites with yogurt drizzle!  I whipped these up in a few minutes over the weekend, and now I have them ready for nutritious snacking throughout the week.

The two flavors I made are double chocolate with strawberry yogurt drizzle, and cranberry almond with vanilla bean yogurt drizzle.  (Are you hungry yet?)

I found the granola and the yogurt for this recipe at Target when I was shopping with my family.

There were lots of varieties of Van’s Simply Delicious Granola to pick from!

Making the granola bites is simple.  Press the granola into molds (Van’s Simply Delicious Granola is so soft and chewy that it works perfectly for this!), then prepare the yogurt drizzle.  Pop out the granola bites, then add the drizzle.

I decided to pair the Van’s Simply Delicious Double Chocolate with the Wallaby Organic Strawberry Greek Yogurt.  Such a good decision… the sweet tanginess of the strawberry yogurt pairs beautifully with the rich chocolate granola.  So good!

As you can see, I used mini silicone molds for this recipe (they hold 1/3 cup of granola perfectly), but if you don’t have silicone molds, you could also try using ice cube trays!

I love chocolate in any form, but the combination of chocolate and strawberry is especially delicious.

For my second variety of granola bites, I chose to use Van’s Simply Delicious Cranberry Almond Granola and Wallaby Organic Vanilla Bean Greek Yogurt.

This was another winning combo!  The cranberry almond granola has a hint of cinnamon, so with the vanilla yogurt it tastes like an indulgent baked good.  (Except it’s gluten-free! And has less sugar!)

Granola Bites with Yogurt Drizzle

Ingredients
  • 1 bag Van's Simply Delicious Gluten-Free Granola
  • ¼ cup Wallaby Organic Greek Yogurt
  • 1 Tbsp. water
  • 1 tsp. vanilla extract
  • ½ tsp. gelatin
  • 1 Tbsp. honey
  • pinch of salt
  • 2 cups powdered sugar
Instructions
  1. Form granola bites by firmly pressing ⅓ cup Van's Simply Delicious Gluten-Free Granola into individual mini silicone molds. (Or use ice cube trays.)
  2. Chill granola bites in fridge while preparing yogurt drizzle.
  3. In a small ramekin, combine water and vanilla extract. Sprinkle gelatin over top and whisk to combine.
  4. Meanwhile, measure ¼ cup Wallaby Organic Greek Yogurt into a bowl. Add honey and salt.
  5. Microwave yogurt mixture 5 seconds, then stir. Continue in 5 second bursts until yogurt is warm.
  6. Pour gelatin mixture into yogurt and stir. Add powdered sugar and whisk well.
  7. Pop granola bites out of molds onto a plate. Drizzle with yogurt coating and allow to dry.
Notes
I used these combinations: Van's Simple Delicious Gluten Free Double Chocolate with Wallaby Organic Strawberry Greek Yogurt, and Van's Simple Delicious Gluten Free Cranberry Almond with Wallaby Organic Vanilla Bean Greek Yogurt. Feel free to mix and match other combinations!

Apricot Goat Cheese Bites

Apricot Goat Cheese Bites - easy & pretty appetizer! | Feathers in Our Nest

Last night I made these super simple appetizers for a porch party at a friend’s house, and I thought I’d share the “recipe” for apricot goat cheese bites with you today!  (Though I’m sure you don’t need my help figuring out what the four ingredients are!)

They’re just so stinkin’ cute, and they’re perfect for a party with the girls.  I’m always looking for new appetizers to add to my list of favorite recipes!

This recipe comes from the gorgeous cookbook, The Forest Feast.  The photos and watercolors in this book are to die for.

I do not have a green thumb, but I’ve managed to keep a pot of thyme alive on my back porch for three years now (nothing short of a miracle!).  All of the other ingredients can be purchased at Aldi or any other grocery store!

Delicious little bites that are the perfect party appetizer!

Ingredients
  • dried apricots
  • goat cheese
  • dried cranberries
  • fresh thyme
Instructions
  1. Place apricots on a platter. Top with a small ball of goat cheese.
  2. Add a dried cranberry and a bit of thyme.
  3. Serve immediately, or refrigerate until later!

Caramel Popcorn

Recipe for caramel popcorn using healthy, natural sweeteners and air popped popcorn. Delicious treat! | Feathers in Our Nest

There’s just something about caramel popcorn!  It satisfies a craving for both sweet and salty, and you can somewhat justify it in your mind as being “healthy” since it’s a whole grain!

I’ve been making this recipe for caramel popcorn (using natural sweeteners) for over two years (since the County Fair night at the beach!).  We like having it as a snack during a movie.

This recipe as written makes a nice, light coating for all the popcorn.  If you want a thicker coating, use less popcorn or double the topping.  Also, this recipe makes a sticky, chewy caramel coating, so if you prefer it to be hard and crunchy, you’ll need to bake it after coating.  I prefer it this way (mostly because I’m impatient and want to eat it right away)!

Caramel popcorn is a delicious treat that satisfies your craving for sweet AND salty!

Serves: 4-6 servings
Ingredients
  • ½ cup UNpopped popcorn
  • ¼ cup sucanat (or brown sugar)
  • ¼ cup honey
  • ¼ tsp. sea salt
  • 2 Tbsp. butter
Instructions
  1. Pop kernels in air popper (or on the stovetop in a large pot over medium heat with 2 Tbsp. coconut oil).
  2. In a small saucepan, combine sucanat, honey, salt, and butter.
  3. Heat over low heat until melted and bubbly.
  4. Pour over popcorn and stir thoroughly (about 2 minutes), scraping the bottom of the bowl.
  5. Taste, and sprinkle with additional sea salt if desired.
