Simple Christmas Cookies Recipe Round-Up

December 18, 2017 by Aliesha

Simple Christmas Cookies Recipe Round Up | Feathers in Our NestI love baking cookies at Christmas time, but I have learned how to do it in a way that fits into this season of life with little ones (so that I’m not stressed out doing it)!

My number one tip is to make your dough one day and bake another day! And if you’re icing the sugar cookies (last recipe), do that step on a third day! So much simpler than trying to do it all in one day! Plus, cookie dough bakes up so much nicer after it’s chilled for a while. Full disclosure: I made most of these cookies without help from my kids. They did help roll some in balls, and Cordelia made the fudge, but for the most part I worked during rest time.

You can even make your doughs weeks ahead of time and freeze them! Whether you’re storing them in the fridge or freezer, be sure to label them!

My second tip is at the bottom of this post, after the recipes!

Here are some of my favorite Christmas cookie recipes that I made this year!

Why I love it: These are delicious and chewy, with prominent ginger flavor, but they are simpler to make than cutout gingerbread cookies.

Why I love it: It’s amazingly delicious and tastes very gourmet, but it just uses a few ingredients and doesn’t require a candy thermometer.

Why I love it: Easy, easy! You can’t mess up this fudge! Like I said, my five-year-old made it this year!

Tip: Make it as written, or double each “half” of the recipe (peanut butter or chocolate) and make separately to add more variety to your cookie platter.

Raspberry Thumbprint Cookies

Why I love it: So pretty on a cookie tray (and looks fancy), but only requires five ingredients!

Tip: Dough is sticky, so refrigerate and use my method for shaping listed at the end of this post. Also works best when baked on a silicone mat or parchment paper.

Snickerdoodles

Why I love it: This recipe makes a chewy cookie that’s just perfect!

Tip: Slightly underbake these!

Chewy Chocolate Crinkles / Chocolate Peppermint Crinkles

Why I love it: They are gluten free, plus you can use this recipe to make two varieties of cookies. One: roll in powdered sugar and omit peppermint pieces. Two: Add 1/4 tsp. peppermint extract when you add the wet ingredients, roll dough balls in powdered sugar, then add a Candy Cane Kiss to the center of the cookies after baking!

Tip: Dough is quite sticky, so refrigerate before shaping. DEFINITELY make these on a silicone baking mat or parchment paper and allow to cool before removing!

Kris Kringle Cookies

Why I love it: These have the tangy flavor of cranberry combined with sweet white chocolate, plus they look so pretty!

Tip: Swap out the mix-ins in half of the dough for another variety of cookie! Christmas M&M’s would be cute!

Peanut Butter Blossoms

Why I love it: Who doesn’t like these? Haha! This recipe is gluten-free and just uses a few ingredients.

Tip: Unwrap your Kisses while the cookies are baking so you’ll be ready when they come out! I usually wait 1 minute before adding the kisses. Add them too soon and they’ll melt completely; add them too late and they won’t stick!

Why I love it: This recipe is SO easy and I love the flavor the almond extract adds (I use imitation).

Tip: Make this ahead of time and let chill before rolling out!

Method for easy cookie shaping

Make dough as directed. Place on a large piece of plastic wrap and shape into a rough square. Fold plastic wrap over. Label. Chill dough. When ready to bake, unwrap dough and place on a cutting board. Using a large chef’s knife, cut dough into even squares. Roll each square into a ball, roll in sugar if directed, and bake as the recipe states. Super fast!!

Happy cookie baking!!

Apple Cranberry Cinnamon Toasters Cookies

This is a sponsored post written by me on behalf of Post Consumer Brands. All opinions are entirely my own.

Apple Cranberry Cinnamon Toasters Cookies made with Malt-O-Meal® Cinnamon Toasters #recipe | Feathers in Our NestAs soon as that first hint of fall finally hits the air, I get a sudden urge to bake!  I love making delicious baked goods for my family all year, but there’s just something about fall that makes me want to cozy up and bake delicious food!  I’m sure I’m not the only one.Apple Cranberry Cinnamon Toasters Cookies made with Malt-O-Meal® Cinnamon Toasters #recipe | Feathers in Our Nest

These yummy cookies certainly fit the bill!  With all the flavors of fall–cinnamon, apples, and cranberries–these cookies will be eaten up faster than I can say, “Cinnamon Toasters!”

When I was shopping at Food Lion recently, I picked up a bag of Malt-O-Meal® Cinnamon Toasters to incorporate into this recipe.  I was pleasantly surprised at the variety of Malt-O-Meal cereals available (I had to grab a bag of S’Mores as well!), such as Golden Puffs, Berry Bunch Crunch, and Frosted Flakes!  I was also impressed with the wonderfully low price per ounce.

And, of course, these Cinnamon Toasters taste amazing!  While I was making the cookies, Tad and I couldn’t stop snacking on them straight out of the bag.  I know this may sound silly, but I really love that the bag has a zip top.  I think this helps keep the cereal fresh and not stale for so much longer than boxed cereal!  Not to mention, there is less waste in the packaging when it’s just a bag and no box.  Gotta love that!Apple Cranberry Cinnamon Toasters Cookies made with Malt-O-Meal® Cinnamon Toasters #recipe | Feathers in Our Nest

Once I decided to make Cinnamon Toasters cookies, it didn’t take me long to figure out that dried apples and cranberries would complement the cinnamon flavor perfectly!  And, boy, was I right!  These cookies just melt in your mouth and you’re instantly delighted with the sweet dough, the cinnamon from the Cinnamon Toasters, and the fruity, tangy flavors of the cranberries and apples.  It’s a delicious combination.Apple Cranberry Cinnamon Toasters Cookies made with Malt-O-Meal® Cinnamon Toasters #recipe | Feathers in Our Nest

These cookies are easy and fast to make, and you could definitely try other mix-ins if you wanted.  I think white chocolate chips would be good, as well as dried cherries!

Penguin OREO Cookie Ball Pops

December 9, 2015 by Aliesha

This post has been sponsored by OREO. All opinions and pictures are my own.OREOCookieBalls5

When I was in college, my friend and roommate Kristin introduced me to OREO Cookie Balls.  We used to buy the ingredients and make them in our dorm room for any occasion imaginable. Parties, weekends, breakups, exams, late nights… OREO cookie balls saw us through.

After college, OREO Cookie Balls were a staple at wedding showers and baby showers too.  My mom and I even made upwards of 400 of them for my wedding!  (Safe to say: I got pretty good at making them!)  Tad and I made quite a few one Christmas to give as gifts (we packaged them as “lumps of coal”).

As my children get older, I am excited for OREO Cookie Balls to be a part of our family’s traditions (around the holidays and at other times too!).  The regular OREO Cookie Balls are a classic, but I wanted to take it up a notch with a sweet surprise for my kids.

I was so excited to try this fun recipe for Penguin OREO Cookie Ball Pops!  My kids love penguins, so these were a perfect fit for us.
OREOCookieBalls9All of the ingredients to make these can be picked up at Kroger while you’re there for your weekly grocery shopping trip.  Got to love one-stop shopping!  Locate your nearest Kroger store here.OREOCookieBalls7These are such fun treats to make for parties or to share with friends and family!  I think they’d make such cute gifts, too.  I think we’ll make another batch to share with our cousins at our annual Christmas beach trip.

OREOCookieBalls1

OREOCookieBallsSteps A few helpful tips:

-The easiest way to finely crush the OREO Cookies is to use a large food processor and pulse until they form crumbs. However, as I mentioned above, I used to make them in my dorm room without fancy tools.  Just put the OREO Cookies inside a gallon sized zip bag and crush them with a rolling pin.

-I always use my hands to combine the OREO Cookie crumbs with the cream cheese. It’s a little messy, but it’s the quickest and most effective way to get the job done!

-In order to cut the Mini OREO Cookies, separate the two halves, remove the cream, then use a sawing motion with a butter knife.

-If you don’t have button candies, you can make the eyes with dots of melted white chocolate. Let stand until firm, then add a drop of black decorating gel to each.

-You can make these treats without the lollipop sticks. Use two forks to roll the cookie balls in melted chocolate until evenly coated, then place balls in prepared pan and decorate as directed.

-Store these treats tightly covered in a container in the refrigerator. OREOCookieBalls6

Enjoy!
