Ginger Crinkles

Crisp on the outside, chewy on the inside, these Ginger Crinkles are as delicious as they are beautiful! Easy to make and packed with flavor! Perfect for cookie exchanges. | Feathers in Our Nest

Our family has been making these cookies at Christmastime for quite a few years, so I was surprised when I realized I had yet to blog the recipe!  Cordelia helped me make a batch the other night, and I plan on making another batch this weekend. We enjoyed snacking on a few of these while watching Rudolph the Red Nosed Reindeer.

Ginger Crinkles are crackly and crisp on the outside, but soft and chewy on the inside and just bursting with flavor. The ginger pairs so beautifully with the sugar on the outside of the cookie.  I just love how pretty they look with all their cracks and shimmery sugar!Ginger Cookies | Feathers in Our Nest

Sweet with just the right amount of spice, these Ginger Crinkles are perfect at Christmastime! They look beautiful on a cookie tray, and they're great for cookie exchanges!

Recipe type: Dessert
Serves: 2-3 dozen
Ingredients
  • ⅔ cup oil
  • 1 cup sugar (plus ¼ cup for rolling)
  • 1 egg
  • ¼ cup molasses
  • 2¼ cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ginger
  • 1 tsp. cinnamon
Instructions
  1. Preheat oven to 350 degrees.
  2. Beat together oil, sugar, and egg. Stir in molasses.
  3. Add dry ingredients, forming a stiff dough.
  4. Form walnut-sized balls and roll in a bowl of sugar.
  5. Place on an ungreased cookie sheet and bake at 350 degrees for 10 minutes.
Notes
Cookies will puff, then fall.

Gingerbread Cookies {Whole Grain}

I’ve always loved gingerbread cookies at Christmas-time!  The smell of gingerbread takes me back to my childhood, when my mom would let us help bake and decorate cookies to give to others and to enjoy during the holiday season.

I made a few changes to our classic family recipe (using whole wheat flour instead of all-purpose, using sucanat instead of white sugar, and using butter instead of shortening), and I loved the results!  I like these cookies plain, and unadorned (there’s something so simple and charming!), but of course they are delicious with decorative icing and/or sprinkles.


Gingerbread Cookies

3 1/2 cups whole wheat flour, freshly ground
3/4 cup sucanat
3/4 cup + 3 Tbsp. butter
1 egg
1 cup + 2 Tbsp. molasses
3 Tbsp. hot water
1/2 tsp. vanilla
1 1/2 tsp. baking soda
1 Tbsp. + 1/8 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Grind wheat in the WonderMill.

In a stand mixer, cream together sucanat, butter, egg, molasses, water, and vanilla.

Combine all dry ingredients using a whisk.  Add dry ingredients to wet ingredients a little at a time.

Refrigerate dough.

Preheat oven to 350 degrees.

Roll out onto floured surface and cut out cookies as desired.

Bake on a silicone mat or greased cookie sheet for 8-12 minutes, depending on cookie size (the medium-sized snowflakes pictured in this post took 9 minutes).  The tops of the cookies should be slightly cracked and a little puffy.

Let cool on baking sheet for 5 minutes, then remove to a wire rack to cool completely.

Decorate, if desired.

Honey Nut Butter Cookies

Despite the name, these cookies can be made allergy-friendly (dairy-free, egg-free, nut-free) just by subbing the nut butter with sunflower butter!  So while the photos show almond butter, you can easily substitute Sunbutter (we like the Trader Joe’s brand)!

Things I love about these cookies: they are whole grain, they use honey instead of refined sugar, and they include a healthy fat (coconut oil).  They are also simple to make!

It’s easy to whip up a quick batch of these yummy cookies today!

Honey Nut Butter Cookies (dairy-free, egg-free, can be nut-free)
(adapted from here)

1 1/4 cups whole wheat flour, freshly ground
1/2 tsp. baking soda
1/4 tsp. sea salt
1/2 cup smooth nut butter (almond butter, peanut butter, or allergy friendly: sunflower seed butter)
1/2 cup honey
3 Tbsp. coconut oil (liquid)
1 tsp. vanilla extract

Grind wheat in the WonderMill.

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper or a silpat baking mat (my preference).

In a bowl, stir together flour, baking soda, and salt.

In a separate bowl, whisk together nut butter, honey, coconut oil, and vanilla.

Add liquid mixture to dry mixture and mix just until all the flour is incorporated.

Using a cookie scoop, form balls from the dough and place on the cookie sheet.

Bake for 10 minutes, then allow to cool for 2 minutes before removing to a wire rack to cool completely.
