Chocolate Chip Cookies

This is a wonderful cookie recipe that our family has enjoyed for years! I like to keep a batch of dough in the fridge and make a dozen cookies when we want some… since they’re the best when they are warm out of the oven! They also are good once they have cooled since they stay chewy.

Chocolate Chip Cookies

1 stick butter, softened
1/2 cup and 1/3 cup shortening
2 eggs
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 cup sugar
1 cup brown sugar, packed
3 cups all purpose flour
1 1/2 cups chocolate chips

Beat together all ingredients except for flour and chocolate chips. Mixture will be smooth and creamy and very light in color. Then, add the flour and the chocolate chips and mix well. Form into balls. Refrigerate dough balls that you are not baking right away. Bake at 375 degrees for 10 to 12 minutes.

My Dad’s Favorite Oatmeal Cookies

My Dad (who reads my blog, and probably wants to know if I’m shipping him some of these…) loves oatmeal cookies. My mom has perfected this recipe over the years and it is absolutely delicious! I would challenge you to find a more perfect oatmeal cookie recipe. 🙂 They are chewy and wonderful every single time! Even if you don’t think you’re “an oatmeal cookie person” you should still try these because you just might become one.

The recipe is SO easy to throw together, and if you have kids, they can help (especially with mixing, since it’s best to do it with your hands). Without further ado… here is the recipe.
Dad’s Favorite Oatmeal Cookies

3/4 cup packed brown sugar
1/2 cup white sugar
3/4 cup raisins or Craisins (or a mixture of both)
2 cups old-fashioned oats
1 cup flour, sifted with:
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking soda
1/2 tsp. salt
1 1/2 sticks butter, softened
1 egg, slightly beaten
1 tsp. vanilla

Combine all dry ingredients in a large bowl. Add wet ingredients and mix with your hands. Form into balls using a cookie scoop. Chill the cookie balls that you aren’t baking in the first batch. Bake at 350 degrees for 11-13 minutes. Do not over-bake! Remove from oven and let cookies sit on the pan for another 2-3 minutes before removing to a wire rack to cool. Yields (around) 32 cookies.

Oreo Truffles

I have made these truffles so many times! They are absolutely irresistible and people always love them. I learned the recipe from my college roommate, Kristin, and we made them together a whole lot last year. I made them for Tad’s and my wedding (about 400 of them!) and recently made them for Kristin’s bridal shower. I promise they’ll be a hit at your next social gathering!

Oreo Truffles

1 package Oreos (I usually use double-stuff)
1 8 oz. package cream cheese, softened slightly (but not too soft!!)
white chocolate morsels

Finely crush Oreos in a large zip bag. The crumbs should be very fine with no large chunks. Pour crumbs into a bowl and scrape cream out of inside of bag into bowl as well. Add block of cream cheese. Mix with your hands until a smooth, black “dough” forms. Form into balls (large marble size) and place on a plate to chill in fridge. Melt white chocolate morsels in the microwave and drizzle (or pipe, using a pastry bag) over the tops of the chilled Oreo balls. Chill and enjoy!
