Roasted Chickpeas: A Healthy Snack Recipe

Healthy roasted chickpeas recipe that is easy for kids to make and great for snacking! Kids love this salty, crunchy snack that you can feel good about too!

The other day I made a batch of roasted chickpeas, and my kids went crazy for them!  I love munching on these, but I was pleasantly surprised at how much my kids enjoyed them as well.  When I posted the above photo on Instagram, several people asked for the recipe, so I thought I would share today!

This is a great recipe for kids to learn to make!  I love letting my kids help me in the kitchen, and this recipe is definitely one that they can make (with a little help from me getting the pan in and out of the oven).

Roasted chickpeas satisfy that craving for something salty and crunchy, while being healthy and full of protein!

Recipe type: Side Dish
Serves: 6 servings
Ingredients
  • 2 cans chickpeas (also called garbanzo beans)
  • olive oil
  • salt
  • seasonings (I used smoked paprika, cumin, and pepper)
Instructions
  1. Prepare a baking sheet by lining it with foil. Preheat oven to 375.
  2. Drain chickpeas in a colander in the sink and rinse well.
  3. Pat chickpeas dry with a paper towel.
  4. In a mixing bowl, combine chickpeas with some olive oil (a few teaspoons), salt to taste, and seasonings of choice. For this batch, I used about 1 tsp. smoked paprika, ¼ tsp. cumin, and ¼ tsp. pepper. You can use any combination of favorite spices!
  5. Pour chickpeas onto prepared baking sheet. Bake 15 minutes, then toss to help them cook evenly. Bake another 15 minutes and check again. You want them to be crispy, but watch carefully so they don't burn.
  6. Let cool and enjoy!
  7. You may store leftovers in an airtight container, but they will lose their crispiness once stored.

Like I mentioned above, these taste the best on the first day they are made (when they are nice and crispy). You can also store them for another day, but I’ve found that they get a little softer at that point (still tasty, though)!

Enjoy on their own as a snack, alongside a meal, or as a salad topping!

I love baking at the holidays (well, anytime, really!).  Recently we had some friends over for a meal, and I knew I wanted to make a beautiful, decadent holiday dessert!

I wanted to try the new Purely Simple™ line from Pillsbury™, so I headed to Publix to pick up a cake mix!  As you know, I am someone who reads ingredient labels, so I was excited to see that the Pillsbury™ Purely Simple™ mixes are made with simple ingredients and do not include any artificial colors, flavors, or preservatives.

Because we’re in peppermint season, I concocted a delicious peppermint cake with peppermint buttercream frosting and white chocolate ganache!

The cake itself is easy… just a Pillsbury™ Purely Simple™ cake mix, eggs, milk, butter, and peppermint extract.  Could not be simpler to make!

The frosting is a breeze to make too, since it starts with a Pillsbury™ Purely Simple™ Buttercream frosting mix.  Just add butter, water, and peppermint extract!

Impressive triple layer peppermint white cake with white chocolate ganache and peppermint buttercream frosting!

Ingredients
  • 1 box Pillsbury™ Purely Simple™ White Cake Mix
  • ½ cup butter, softened
  • 1 cup milk
  • 3 eggs
  • ½ tsp. peppermint extract
  • 1 package Pillsbury™ Purely Simple™ Buttercream Frosting Mix
  • ½ cup butter, softened
  • ¼ cup water
  • ½ tsp. peppermint extract
  • 1 cup white chocolate chips
  • 1 cup heavy cream
  • Optional (for garnishing): candy canes and additional white chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Grease and flour three round cake pans.
  2. Blend cake mix and butter in bowl with mixer on medium speed until combined.
  3. Add milk, eggs, and peppermint extract, mixing on low speed to combine. Beat on medium speed for one minute, then increase to medium high and blend for two additional minutes.
  4. Divide batter evenly into three pans.
  5. Bake at 350 degrees for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool cake before frosting.
  7. To prepare frosting, combine frosting mix and butter with a mixer set to low speed.
  8. Add water and peppermint extract and mix on low until combined.
  9. Beat on high speed for 30 seconds, scraping bowl as needed.
  10. To assemble cake, place first layer on plate or cake stand. Cover with a thin layer of frosting and a layer of white chocolate ganache (see "notes" below).
  11. Add second layer, frost, and add ganache.
  12. Add third layer and frost. Frost sides of cake. Drizzle a bit more ganache on top if desired.
  13. Other garnish ideas: crush candy canes in a large zip bag and press them into the sides of the cake. Melt white chocolate, then drizzle it onto waxed paper to form trees. When hardened, place trees on top of cake.
  14. Serve cake at room temperature or chilled.
Notes
For white chocolate ganache, pour 1 cup white chocolate chips into a heat-proof bowl. In a small saucepan, heat 1 cup heavy cream until steaming (but not boiling). Pour cream over white chocolate and stir until melted. Refrigerate ganache until needed.

Ways to Take a Cake Over the Top

-Coat the sides with crushed candy canes, crushed cookies, or sugar sprinkles

-Create chocolate flourishes, trees, or snowflakes using chocolate or white chocolate

-Serve the cake on a beautiful cake plate

-Drizzle ganache over the cake before serving

-Add a special garnish such as fresh raspberries or sugared cranberries

I chose to garnish my cake with crushed candy canes along the sides, white chocolate ganache in between the layers and on the top, and white chocolate trees on the top to give it a beautiful presentation!

This cake has a delicious homemade taste despite starting from a box mix and being so simple to throw together.  Combined with the beautiful garnishes, it’s the perfect recipe for holiday entertaining!

Ginger Crinkles

Our family has been making these cookies at Christmastime for quite a few years, so I was surprised when I realized I had yet to blog the recipe!  Cordelia helped me make a batch the other night, and I plan on making another batch this weekend. We enjoyed snacking on a few of these while watching Rudolph the Red Nosed Reindeer.

Ginger Crinkles are crackly and crisp on the outside, but soft and chewy on the inside and just bursting with flavor. The ginger pairs so beautifully with the sugar on the outside of the cookie.  I just love how pretty they look with all their cracks and shimmery sugar!Ginger Cookies | Feathers in Our Nest

Sweet with just the right amount of spice, these Ginger Crinkles are perfect at Christmastime! They look beautiful on a cookie tray, and they're great for cookie exchanges!

Serves: 2-3 dozen
Ingredients
  • ⅔ cup oil
  • 1 cup sugar (plus ¼ cup for rolling)
  • 1 egg
  • ¼ cup molasses
  • 2¼ cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ginger
  • 1 tsp. cinnamon
Instructions
  1. Preheat oven to 350 degrees.
  2. Beat together oil, sugar, and egg. Stir in molasses.
  3. Add dry ingredients, forming a stiff dough.
  4. Form walnut-sized balls and roll in a bowl of sugar.
  5. Place on an ungreased cookie sheet and bake at 350 degrees for 10 minutes.
Notes
Cookies will puff, then fall.
