Perfect Cold Brew Iced Coffee

August 29, 2016 by Aliesha

Perfect Cold Brew Coffee at Home! Easy DIY recipe using a French Press | Feathers in Our NestLately Tad and I have been experimenting with making cold brew iced coffee at home (ever since we bought a bottle of cold brew concentrate at TJ’s that was awesome), and we’ve figured out the perfect recipe!

You’ll need a French press coffee pot (ours is from here, but here’s a similar one) and some coffee beans.

Grind your coffee beans to a medium/coarse  grind.  Pour 3/4 cup coffee grounds in the bottom of the French press.

Add 2 1/2 cups filtered water and stir gently with a wooden spoon.  Place the lid on the French press but don’t push the plunger down.

Chill in the fridge for 12-24 hours (I like 18 hours), then plunge the filter down.

Pour the cold brew coffee concentrate into a jar or bottle for storage in the fridge.

Now the fun part!  Make your iced coffee by combining ice, cold brew concentrate, a bit of sweetener (if desired), and milk or water.

I don’t measure, but my guess is that I use 1 cup ice, 1/2 cup cold brew concentrate, 1 cup milk, and 1 tsp. maple syrup.  Liquid sweetener works best since you’re adding it to cold coffee.  If you don’t want to use maple syrup, you could make your own simple syrup to use.

Hot Chocolate Mix – Just 3 Ingredients!

November 6, 2015 by Aliesha

HotChocolateMixAs soon as there is a hint of a chill in the air, my kids start begging for hot chocolate!  (Yes, even on the days when it will be in the 70’s by noon!)

I love having this mix pre-made in my pantry so that we can have hot chocolate whenever the mood strikes!

I have to credit Martha Stewart for this recipe.  I wanted to try it since so many hot chocolate mix recipes call for powdered milk, and I wanted one that I could just whisk into milk we have on hand.

When I make the hot chocolate for our family, I heat a larger amount of milk on the stove and add the appropriate amount of mix to the pot.  I love to froth the milk a bit with a hand frother!HotChocolateMix2

This makes a lovely Christmas gift as well!

Note: Pictured in the pictures is a “half-batch” of this mix, so that should give you an idea of how much a full batch makes.

Iced Mocha

Easy Iced Mocha Recipe - make this coffeehouse favorite at home! Simple steps to make a delicious, refreshing treat! | Feathers in Our Nest

I shared this iced mocha recipe on Instagram over the weekend, but I wanted to share it here as well!  I loved making coffeehouse drinks at home, and for this one, you don’t even need an espresso machine!  You do have to plan ahead and make some double-strength coffee and have it chilled.  I made a 4-cup batch and I’ve been using it throughout the week to make drinks!

Fill a glass 2/3 full of ice (about a cup).DSC_1616copysm

Add 1/4 cup of double-strength chilled coffee (I made mine the day before using twice as many grounds as normal, and just put it in the fridge overnight).DSC_1618copysm

Add milk to the top (about 3/4 cup).DSC_1620copysm

Drizzle in 2 Tbsp. chocolate syrup.  I used Drea’s homemade chocolate syrup recipe.DSC_1622copysm

Stir with a straw, taste, then add more chocolate syrup if desired.Easy Iced Mocha Recipe - make this coffeehouse favorite at home! Simple steps to make a delicious, refreshing treat! | Feathers in Our Nest

The next step is completely optional, but this drink looks fabulous when topped with whipped cream and a little more chocolate syrup!Easy Iced Mocha Recipe - make this coffeehouse favorite at home! Simple steps to make a delicious, refreshing treat! | Feathers in Our Nest
