Oreo Truffles

I have made these truffles so many times! They are absolutely irresistible and people always love them. I learned the recipe from my college roommate, Kristin, and we made them together a whole lot last year. I made them for Tad’s and my wedding (about 400 of them!) and recently made them for Kristin’s bridal shower. I promise they’ll be a hit at your next social gathering!

Oreo Truffles

1 package Oreos (I usually use double-stuff)
1 8 oz. package cream cheese, softened slightly (but not too soft!!)
white chocolate morsels

Finely crush Oreos in a large zip bag. The crumbs should be very fine with no large chunks. Pour crumbs into a bowl and scrape cream out of inside of bag into bowl as well. Add block of cream cheese. Mix with your hands until a smooth, black “dough” forms. Form into balls (large marble size) and place on a plate to chill in fridge. Melt white chocolate morsels in the microwave and drizzle (or pipe, using a pastry bag) over the tops of the chilled Oreo balls. Chill and enjoy!

Menu… Tuesday

We are getting unpacked and settled into our new home! I feel like the kitchen is getting close to being in order, so I can start thinking about cooking again! My family is coming to spend Easter weekend with us, so we are very much looking forward to that. They are bringing a lot of food with them, which is quite a blessing!!

Breakfasts: cereal, oatmeal, muffins

Monday
Dinner: spaghetti, bread, salad

Tuesday
Lunch: leftovers
Dinner: chicken Kiev, baked potatoes, green beans

Wednesday
Lunch: sandwiches
Dinner: macaroni and beef

Thursday
Lunch: leftovers
Dinner: TBD (probably something from the freezer)

Friday
Lunch: soft tacos, all the fixin’s
Dinner: grilled meat, baked potatoes, tossed salad, Angel Rolls

Saturday
Lunch: chicken salad, croissants, Italian pasta salad, veggie platter, fresh fruit
Dinner: ham, fried potatoes, Caesar coleslaw, mixed veggies

Sunday (Easter)
Breakfast: egg-bacon souffle, toast, juice, coffee
Lunch: ham, cheesy potatoes, green beans, sugar-free raspberry jello salad, Angel Rolls, lemon pound cake
Dinner: (my family gone) leftovers!
I’m making a lot of different recipes this week (some new, some old) that I haven’t posted about before. I’ll try to take lots of pictures of what I make so I can post the recipes next week sometime! A lot of these are family favorites, so I’d love to share them with you!

Week Twenty-One

Sorry I didn’t post this yesterday, but we were pretty busy! To compare with last week’s photo, click here.

I feel like I’ve really “popped out” this week! I have had some strangers look at me when I’ve been out in public… and I think they were trying to figure out if I was pregnant or not.

Our baby girl is doing great. She continues to be very active and I get excited every time I get to feel her moving around and kicking!

We are looking forward to meeting her in August!
