Confetti Salsa

I created this recipe last week in an effort to induce labor by eating spicy foods (no, it’s not working yet…)! This salsa is KICKIN’ HOT, so be warned! (I’m a girl who refuses to buy mild salsa, so believe me when I tell you this is kickin’!) Also, make sure you wear gloves when you cut up the peppers. I didn’t know I was supposed to do this, and I actually got legit chemical burns on my fingers. Not so good. Feel free to adapt this recipe to suit your taste buds!

Confetti Salsa (aka, Get This Baby Out NOW Salsa)
1 jalapeno pepper, seeded and finely chopped
1 serrano pepper, seeded and finely chopped
1 red fresno pepper, seeded and finely chopped
1 orange Scotch bonnet pepper (not sure if that’s definitely what it was), seeded and finely chopped
1 yellow Scotch bonnet pepper (not sure if that’s definitely what it was), seeded and finely chopped
a few slices of white onion, finely chopped
a few slices of red onion, finely chopped
3 cloves garlic, minced (more if you like)
black pepper
salt
garlic powder
1/2 can black beans, drained and rinsed
1 can diced tomatoes, drained
canned corn, optional

Combine peppers, onion, and garlic. Season with pepper, salt, and garlic powder. Add beans and diced tomatoes (and corn, if desired). Taste and season again if necessary. Chill in fridge (overnight is best), then serve with tortilla chips.Look at all those beautiful colors! Enjoy!

Menu Monday

I would reeeeeally rather be having a baby today than menu planning for the week, but in case she doesn’t come soon, I still have to cook this week! Trying to keep it simple.

Monday
Lunch: leftovers
Dinner: creamy basil parmesan chicken and pasta, garlic bread, salad

Tuesday
Lunch: hot dogs (children’s event at church)
Dinner: spicy garlic chicken, rice

Wednesday
Lunch: leftovers
Dinner: BLTs, salad

Thursday
Lunch: turkey sandwiches, fruit
Dinner: lasagna, salad

Friday
Lunch: leftovers
Dinner: chicken stir fry, rice

Saturday/Sunday
TBD

My Office Space

Today I thought I would share with you my desk area in our home office.
This is where I blog, email, menu plan, research, and much more! I try to keep it organized, but I’ll be honest, the space often gets covered in paper piles!
This birdcage was a gift from my sister-in-law. It’s so cute!
I love these signs that add pops of color to my workspace!
I made this coaster using a similar technique to what I used to make these decorative balls.
