Saving My Sanity: Onions, Sundays, & Boredom

July 2, 2013 by Aliesha

I’m back today with three more homemaking/parenting tips for you!  Again, these aren’t in a particular order.

– Cut an onion underneath the vent above the stove
I turn the stove hood vent on high and cut onions underneath it to help reduce the watery eyes that usually come with this activity.  Another bonus tip: rub your hands on something stainless steel (like a sink) to remove the smell of onions or garlic from your hands and fingertips!

– Prepare for Sundays on Saturday nights
I’ve mentioned this before, but it’s been revolutionary for our family, so I deemed it worth mentioning again.  On Saturday nights, I prepare as much as possible for Sunday morning.  I lay out the girls clothes (and accessories, like tights and shoes), as well as choose my outfit.  I pack the girls’ backpacks so they are ready to go (complete with Bibles and offering).  I try to make sure the kitchen is cleaned up and ready for breakfast the next morning.  Bonus points if I remember to set up and program the coffee pot!

– I’m trying to teach my children that sometimes it’s okay to be bored
While I do pack books for long car rides, if we’re just going a short distance (or even an hour or two), I don’t feel the need to keep my kids constantly entertained.  Sometimes it’s okay to just sit and look out the window!  I also don’t pack a lot of activities for doctor’s appointments, etc.  We talk or play “I Spy” in the waiting room, but I want them to learn that this is a doctor’s appointment, not a circus.  It’s important for me to work with my girls on being patient and understanding that not everything in life revolves around them!

Do you have any tips to share today?

Weeks Thirty/Thirty-One

July 1, 2013 by Aliesha

I had an appointment with my midwife last week and everything looks great!  I was a little surprised by my weight gain since my last appointment, but it’s normal for me to put on a good bit during the “home stretch.”  My midwife didn’t seem concerned.

Baby Punkin’ is head-down, so we praise God for that!  He continues to be active and his heartbeat is in the 130’s-140’s.

The humidity has really been sapping me of energy lately!  I can take the heat, but this humidity is exhausting!  I am thankful for the rest I am able to get each afternoon.  And AC!  I am very thankful for AC!  So far I’ve avoided any swelling in my feet/ankles, and I am very thankful for that.  At this point in Vera’s pregnancy (also during the summer), my feet looked like balloons!

We appreciate your prayers!

Fast Whole Wheat Garlic Breadsticks

June 29, 2013 by Aliesha

This post has also been posted on Baking Whole Grains, a site I write for which compensates me for sharing whole grain recipes.  While I receive compensation, this does not influence my opinions.  All photos and directions are my own.

Tad loves anything with garlic (and, who am I kidding? I do too!), so these garlic breadsticks are always a HUGE hit whenever I make them!  They are SO fast to make, which is awesome when I want to have bread to go with an Italian meal but only thought about it 45 minutes before dinner time.

I’ve made these with 100% whole wheat flour and with half all-purpose.  Both ways are good!

You can easily whip up a batch to go with dinner tonight, especially since all of the ingredients are pantry staples!

Fast Whole Wheat Garlic Breadsticks
   (adapted from here)

1/4 cup (1/2 stick) butter
1 Tbsp. olive oil
3 cups whole wheat flour, freshly ground (or use half unbleached all-purpose)
1 tsp. and 1/2 tsp. sea salt, divided
1 Tbsp. baking powder
1 tsp. and 1/2 tsp. garlic powder, divided
1 Tbsp. parsley flakes
up to 1 cup milk

Grind wheat in the WonderMill.

Preheat oven to 425 degrees.  While oven is preheating, place 1/2 stick butter and 1 Tbsp. olive oil in a 9×13″ pan in the oven.  (Be sure not to let it burn; just melt.)

In a mixing bowl, combine flour(s), 1 tsp. sea salt, baking powder, 1 tsp. garlic, and parsley flakes.  Whisk to combine.

Add milk 1/4 cup at a time and stir with a wooden spoon until a dough forms, leaving the sides of the bowl.  (I usually use more than 3/4 cup but less than 1 cup.)

Turn dough onto a floured surface and knead 5-6 times, being careful not to overwork the dough.  Shape/roll into a 9×13″ rectangle.

Pull 9×13″ pan out of the oven and sprinkle melted butter/oil with reserved 1/2 tsp. sea salt and 1/2 tsp. garlic powder.  Place dough rectangle on top.  Cut into 1/2 inch strips (I usually cut longways down the middle first and then across at 1/2″ increments).

Bake for 16-20 minutes.

Enjoy!
