Spinach & Mozzarella Pinwheels

At our house, we love homemade pizza!  I probably make it at least twice a month, if not more often than that!  Sometimes, though, I like to change it up a bit.  These Spinach and Mozzarella Pinwheels use the same ingredients as homemade pizza, but are served up in a fun, new way!  My girls love them (I think there’s something about “dipping” that’s super-fun), and it’s an easy way to get your spinach in your diet.

These would be a fun appetizer as well when served at a party before an Italian dinner.  The filling options are truly endless… just use what you have on hand to customize these to your family’s likes!


Spinach and Mozzarella Pinwheels

2 cups whole wheat flour, freshly ground
2 1/2 tsp. yeast (or one packet)
1/2 tsp. salt
1 cup warm water
2 Tbsp. olive oil
2 cups shredded mozzarella cheese
1 cup baby spinach, stems removed
1 Tbsp. olive oil
marinara sauce (I used homemade)
salt & freshly ground black pepper

Grind wheat in the WonderMill.  Prepare dough (first 7 ingredients) according to these directions.

When dough has risen (again, refer to these step-by-step directions), knead for 2-3 minutes and roll out onto a well-floured surface into a 12-inch circle, 1/4 inch thick.

Preheat oven to 425 degrees.  Line a baking sheet with a Silpat mat or parchment paper.

Over dough, sprinkle 1 cup shredded mozzarella cheese.  Add spinach, and top with remaining 1 cup of cheese.

Roll dough into a log (like you would if you were making cinnamon rolls) and tuck in the ends.  Using your hands, coat the whole roll with olive oil, salt, and freshly ground black pepper.

Place the roll (seam side down) on the prepared baking sheet.  Bake for 20 minutes, or until top is golden brown.

Cool for 2-3 minutes, then slice.  Serve with heated marinara sauce and a sprinkle of parmesan cheese!

Week Forty

Well I’ve reached 40 weeks once again, and this baby is going to have a September birthday!  I’m not really surprised, since I went to 41 weeks, 6 days with Vera and to 41 weeks, 2 days with Cordelia!  Read why I don’t think “40 weeks” is such a big deal.

With that said, I am struggling with wanting him to come now.  I’ve been facing a lot of pregnancy discomforts in the last week (I’ll spare you the details)!  Overall, though, I am very thankful to still be carrying a healthy baby.  My midwife seems to think he’s going to be big!  (Like 8.5 pounds or more…)

Things you can be praying for us:
-that I would have relief from the discomforts/difficulty sleeping I’ve been having the last few weeks
-that labor would start naturally without artificial induction
-that God would give me patience as I wait on His perfect timing for the birth of our baby boy
-that I would once again be able to have an unmedicated, natural birth

Vera’s Birthday Festivities

Vera didn’t have a “party,” per se, this year, but she did have three birthday celebrations around or on her special day!

MiMi (my mom) visited the week before Vera’s birthday and brought an angel food cake to help her celebrate!

Vera was thrilled with her birthday gift… a trampoline!  Vera said: “I weally love this bouncy thing!!”

Cordelia likes it too!

On Vera’s actual birthday, I took both girls out to lunch, which was so fun.  They were very well-behaved at the (sit-down) restaurant, and Vera had an ice cream sundae for dessert!

Per Vera’s request, I made homemade pizza with cheese and bacon for dinner, as well as salad (she loves salad!) and a chocolate cake!

Grammy called just as we were getting ready to sing to Vera, so she helped us serenade her with “Happy Birthday!”

Vera was not sure about all the fire on her cake!

The Friday after Vera’s birthday, Grandanny & Grammy came to see us too!

In addition to a delicious dinner, Grammy also made peach cobbler!

Vera finally got the hang of blowing out a candle!

We hope Vera treasures all of the memories from her third birthday!  We love her so much!
