Menu Monday

Well… this is the first time I’ve actually planned out menus since before Christmas due largely to my pregnancy-related nausea. This week we are eating out of the pantry and freezer, utilizing the things we already have on hand!

Breakfasts:
eggs, grapefruit, cereal, oatmeal, cinnamon rolls

Monday
Lunch: Chicken Lo Mein
Dinner: leftovers

Tuesday
Lunch: soup, whole wheat bread
Dinner: chicken fajitas, tortilla chips, salsa, fruit

Wednesday
Lunch: homemade whole wheat pizza, fruit
Dinner: pork roast, mashed potatoes, green beans

Thursday
Lunch: pulled pork sandwiches, french fries
Dinner: cheese and spinach egg scramble, toast, jam

Friday
Lunch: ramen noodles
Dinner: Tad’s parents coming!

Saturday
Lunch: burritos, chips, salsa
Dinner: lasagna (with Tad’s mom’s spaghetti sauce recipe), garlic french bread

Sunday
leftovers

Menu Monday… and a very productive day!

Today Tad took the day off so we could run errands and get things done all day! Here’s a rundown on what we got done:

– spent 45 minutes on the phone with a particular government-run office
– menu planned
– made grocery list and list for the day
– bank business
– got the oil changed
– dropped off Tad’s suit to be dry cleaned
– insurance business
– realtor/broker business
– made an appointment
– ate lunch at Olive Garden (yay for unlimited soup, salad, and breadsticks!)
– applied for a new Social Security card at the local office
– went grocery shopping
– unloaded groceries
– made dinner (well… it’s in the oven)

We feel very accomplished! Glad we were able to get all those things done today…and thankful we could do them together!

Menus for this week

Monday
Dinner: meatloaf, garlic mashed potatoes, peas, pears

Tuesday
Breakfast: cereal
Lunch: ramen noodles
Dinner: WMU (me): mozzarella chicken; Tad: leftover meatloaf (it’s okay… he really likes it!)

Wednesday
Breakfast: oatmeal
Lunch: baked potatoes, sauteed mushrooms and onions, crumbled bacon
Dinner: Moe’s-style burritos, tortilla chips, salsa, peaches

Thursday
Breakfast: muffins, juice
Lunch: tuna, wheat crackers, applesauce (Tad gone)
Dinner: beef stir fry, rice, pineapple

Friday
Breakfast: eggs
Lunch: ramen noodles, veggies
Dinner: meatless spaghetti sauce, pasta, sauteed mushrooms, bread

Saturday
Breakfast: cereal
Lunch: leftovers
Dinner: beef tips and gravy, au gratin potatoes, green beans

Here’s a picture of the pizza I made for a lunch last week. (It changes every time I make it!) This one had a whole-wheat crust and included three types of cheese, tomatoes, red peppers, onions, spinach, bacon, and seasonings. I think Tad ate four pieces! 🙂

Monday
Lunch: out (in Washington)
Dinner: freezer dinners (hungry after grocery shopping…not a regular habit)

Tuesday
Breakfast: muffins
Lunch: soup, pumpernickel rolls, raspberry jello
Dinner: homemade pizza, fresh veggies

Wednesday
Breakfast: cereal, cinnamon bagels
Lunch: chicken Caesar wraps
Dinner: fettucine alfredo, fresh green beans, bread

Thursday
Breakfast: yogurt, cereal
Lunch: tuna (Tad out)
Dinner: cheddar broccoli soup (Panera Bread copycat recipe), bread bowls, warm golden apple chunks

Friday
Breakfast: eggs & spinach
Lunch: in Richmond…family Christmas gathering
Dinner: in Richmond…family Christmas gathering

Saturday
Breakfast: cereal, cinnamon bagels
Lunch: soup, salads (or leftovers)
Dinner: Bacon Apple Fest (already made and in the freezer)

Sunday
Breakfast: scrambled eggs
Lunch: out (visiting)
Dinner: leftovers

There you have it! Our super simple dishes for this week!

Here’s a picture of the Chicken Mozzarella dish I made last week.P.S. These beautiful white casserole dishes totally make me feel like an amazing homemaker! haha.
