Korean Beef Bowl

When I conducted my reader survey a while back, many of you mentioned that you’d like to see more frugal recipes!  We eat a lot of healthy, inexpensive meals, so I’m going to start sharing more of them with you!

This recipe is fast and simple, plus it’s very flavorful.  The beef mixture freezes well, so if you make a double or triple batch, you can freeze portions for later.

I recently found a sale on grassfed beef ($2.38/lb.!) so I used that, but I’ve also made this with ground turkey and it’s really good as well.  We tend to go lighter on the meat so that it stretches further, but you can serve up larger portions of the beef mixture if you desire.

Ingredients
  • ⅓ cup pure maple syrup (I've also used sucanat successfully)
  • ¼ cup soy sauce
  • 1 Tbsp. toasted sesame oil (good price at Trader Joe's)
  • ¼-1/2 tsp. crushed red pepper flakes
  • ¼ tsp. ground ginger
  • 1 lb. ground beef or turkey
  • 4 garlic cloves, minced
  • 4 green onions, finely sliced
  • hot cooked brown or white rice
Instructions
  1. (Before you start the recipe, start cooking your rice.)
  2. In a glass measuring cup, whisk together maple syrup, soy sauce, toasted sesame oil, crushed red pepper flakes, and ground ginger.
  3. Brown beef over medium heat.  When no longer pink, drain excess grease and return beef to pan.
  4. Add garlic and cook 30-60 seconds until fragrant.  Pour in sauce and half of the green onions.
  5. Bring to a simmer and cook for 2-3 minutes.
  6. Serve over hot cooked rice and garnish with remaining green onions.
  7. Enjoy!

Greek Chicken Flatbread

Every now and then, I get on a real “Greek food” kick, where I pretty much put hummus and feta cheese on everything.  I recently learned how to make flatbread, which has been a delicious addition to our “Greek fests”!

This bread is chewy and filling, but still puffy and perfectly browned.  It’s great for making an open-faced sandwich (see recipe below!) or even as the base for a simple, broiled pizza.

2 1/4 tsp. yeast (1 packet)
1/2 tsp. sugar
3/4 cup whole wheat flour, freshly ground
1 cup unbleached all-purpose flour
1 tsp. Kosher salt
1 tsp. dried thyme
3/4 cup warm water
1 tsp. olive oil

Grind wheat in the WonderMill.

In a mixing bowl, combine yeast, sugar, flours, salt, and thyme.  Whisk together.

Add water and stir just until the dough begins to stick together.  Knead dough on a floured surface until it forms a ball that is smooth and elastic.

Using the tsp. of oil, coat a bowl with oil and place the ball of dough inside.  Cover, and let rise until doubled (about an hour).

When dough has risen, divide dough into 6 equal portions.  Roll out into ovals.

Heat a large pan over medium heat (do not oil).  Add the dough rounds (I did three at a time) and cook on one side until puffy and lightly browned.  Flip once and cook until the other side is lightly brown as well.

Use the flatbreads to make this delicious meal:



Quick Dinner: Greek Chicken Flatbreads
    adapted from Better Homes & Gardens

1/2 cup roasted garlic hummus
1/2 cup plain Greek yogurt
flatbread (see recipe above)
spinach or baby romaine
grilled chicken, sliced
chopped cucumber
chopped tomatoes
(optional) chopped onions
crumbled feta cheese

Combine hummus and yogurt in a small bowl.  Spread over the flatbreads.  Top with spinach or baby romaine, sliced grilled chicken, cucumber, tomatoes, onions, and feta cheese.  If desired, sprinkle with parsley.

Serve with additional veggies, hummus, and pita chips!

Go-To Whole Grain Recipes

I post a lot of recipes made with whole grains, so I thought today I’d share which ones are my “go-to,” all-time-favorite whole grain recipes!  These are the recipes I make over and over again and feel totally comfortable making for company, taking to potlucks or family gatherings, or giving to friends.

Best Loaf Bread

Foolproof Whole Wheat Bread
I love making this bread and it really is foolproof (as long as you remember the yeast!).  This is a great recipe to start with if you’re new to making yeast breads.  It’s absolutely delicious and so healthy for you!

Best “Company” Bread

Rosemary Peasant Bread
Great for company and for holidays, this bread is easy enough to make on a regular basis too!  We love, LOVE this bread and everyone we’ve made it for has liked it as well.

Best Biscuits

Whole Wheat Whipping Cream Biscuits
I make biscuits to go with dinner quite often, and this is my favorite recipe.

Best Cornbread

Whole Grain Cornbread
This cornbread is delicious paired with chili, ham soup, gumbo or jambalaya, pinto beans & rice, and many more meals!  It’s really fast to make.

Whole Wheat Pancakes (with optional Strawberry Sauce)
This is the recipe I turn to every time I make pancakes.  They’re great topped with blueberry sauce (or just butter and honey) too!

Real Food Chocolate Chip Cookies
For a dessert, these are pretty healthy.  With natural sweeteners, coconut oil, and mostly whole wheat flour, these are a great way to satisfy your sweet tooth!

Best Pizza Crust

Whole Wheat Italian Herb Garlic Pizza Crust
We have pizza almost every week, and this is the crust recipe I always make.  It has great flavor and pairs wonderfully with TONS of topping combinations!

Best Pie Crust

Whole Grain Pie Crust
When I make a pie crust, this is my go-to recipe.  It’s light even though it’s made with whole grains.  The recipe is great for sweet or savory pies!
