Caramel Popcorn

Recipe for caramel popcorn using healthy, natural sweeteners and air popped popcorn. Delicious treat! | Feathers in Our Nest

There’s just something about caramel popcorn!  It satisfies a craving for both sweet and salty, and you can somewhat justify it in your mind as being “healthy” since it’s a whole grain!

I’ve been making this recipe for caramel popcorn (using natural sweeteners) for over two years (since the County Fair night at the beach!).  We like having it as a snack during a movie.

This recipe as written makes a nice, light coating for all the popcorn.  If you want a thicker coating, use less popcorn or double the topping.  Also, this recipe makes a sticky, chewy caramel coating, so if you prefer it to be hard and crunchy, you’ll need to bake it after coating.  I prefer it this way (mostly because I’m impatient and want to eat it right away)!

Caramel popcorn is a delicious treat that satisfies your craving for sweet AND salty!

Serves: 4-6 servings
Ingredients
  • ½ cup UNpopped popcorn
  • ¼ cup sucanat (or brown sugar)
  • ¼ cup honey
  • ¼ tsp. sea salt
  • 2 Tbsp. butter
Instructions
  1. Pop kernels in air popper (or on the stovetop in a large pot over medium heat with 2 Tbsp. coconut oil).
  2. In a small saucepan, combine sucanat, honey, salt, and butter.
  3. Heat over low heat until melted and bubbly.
  4. Pour over popcorn and stir thoroughly (about 2 minutes), scraping the bottom of the bowl.
  5. Taste, and sprinkle with additional sea salt if desired.

Summer Recipes to Beat the Heat

This week we’re experiencing hot, hot weather in North Carolina!  I’m doing everything I can to keep the oven off… but of course I still want to feed my family healthy, delicious meals!

I got a little help from my facebook friends last week in order to come up with some creative meal ideas and summer recipes to beat the heat!  I also found a really awesome YouTube channel: The Domestic Geek, which provided several recipes and lots of inspiration.

I cooked about 5.5 lbs. of boneless, skinless chicken breasts (on sale at Aldi this week for $1.89/lb.) in two different ways: pan-seared thyme chicken and marinated Greek chicken.  This did require turning on the oven, but because I cooked it all on Monday, I won’t have to worry about heating up the kitchen the rest of the week!

If you really don’t want to turn your oven on even to cook the big batch of chicken, you could easily pick up a rotisserie chicken or two!

…and for dessert, Greek yogurt topped with raspberries and blueberries with a drizzle of honey!

This meal came together in about 15 minutes because I had already done the prep work ahead of time.  The girls helped me plate everything on serving platters and carry it to the table.  They loved this meal!

On Sunday I also made a broccoli salad, so I’ve been enjoying that on the side with a few other meals.

We ate chicken salad sandwiches for lunch yesterday (again, with previously cooked chicken) with pickles and strawberries on the side.

Other things that are on the menu this week (lunches and dinners are on this list):

– Greek chicken wraps with Greek hummus

– Caesar salads with chicken and croutons (I need to blog the Caesar dressing recipe… it’s amazing!)

– tuna salad wraps or sandwiches with hard boiled eggs and fresh veggies and fruit

– tacos with corn salsa and black bean dip (I will have to cook the taco meat on the stovetop, but I plan on making it the night before)

– nitrite/nitrate-free deli meat, crackers, cheese, veggies, and fruit

– leftover chicken and pasta salad (and whatever other yummy leftovers we have!)

– peanut butter sandwiches

– taco salads and tortilla chips

We’re also enjoying raspberries, strawberries, blackberries, blueberries, and watermelon!  I love summer produce!

Break from the Kitchen

Sometimes as a mom I just need a break from the kitchen!  Particularly, it seems, on lovely spring days that are just begging to be enjoyed.  On evenings like that, it’s so convenient to place an order online at Papa John’s and ask my sweet husband to pick it up on his way home!

The dough for the crust is always made fresh, never frozen, from just seven ingredients. I had fun choosing from the wide variety of delicious toppings to create the perfect pizza for our family!  Side #1: onions, mushrooms, bacon, & ground beef.  Side #2: onions, mushrooms, peppers, tomatoes, and grilled chicken.  The green peppers and onions are sliced in each store before topping the pizza, and they have no fillers in their meat toppings.  Delicious!

Our whole family was excited about pizza night, but I think I was the most excited about getting to skip out on dinner prep in favor of spending more time with the kids.  We played on the porch, watched trucks drive by, visited with a neighbor, and took a walk.  It’s nice to play “hooky” sometimes!
