I love baking at the holidays (well, anytime, really!).  Recently we had some friends over for a meal, and I knew I wanted to make a beautiful, decadent holiday dessert!

I wanted to try the new Purely Simple™ line from Pillsbury™, so I headed to Publix to pick up a cake mix!  As you know, I am someone who reads ingredient labels, so I was excited to see that the Pillsbury™ Purely Simple™ mixes are made with simple ingredients and do not include any artificial colors, flavors, or preservatives.

Because we’re in peppermint season, I concocted a delicious peppermint cake with peppermint buttercream frosting and white chocolate ganache!

The cake itself is easy… just a Pillsbury™ Purely Simple™ cake mix, eggs, milk, butter, and peppermint extract.  Could not be simpler to make!

The frosting is a breeze to make too, since it starts with a Pillsbury™ Purely Simple™ Buttercream frosting mix.  Just add butter, water, and peppermint extract!

Ingredients
  • 1 box Pillsbury™ Purely Simple™ White Cake Mix
  • ½ cup butter, softened
  • 1 cup milk
  • 3 eggs
  • ½ tsp. peppermint extract
  • 1 package Pillsbury™ Purely Simple™ Buttercream Frosting Mix
  • ½ cup butter, softened
  • ¼ cup water
  • ½ tsp. peppermint extract
  • 1 cup white chocolate chips
  • 1 cup heavy cream
  • Optional (for garnishing): candy canes and additional white chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Grease and flour three round cake pans.
  2. Blend cake mix and butter in bowl with mixer on medium speed until combined.
  3. Add milk, eggs, and peppermint extract, mixing on low speed to combine. Beat on medium speed for one minute, then increase to medium high and blend for two additional minutes.
  4. Divide batter evenly into three pans.
  5. Bake at 350 degrees for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool cake before frosting.
  7. To prepare frosting, combine frosting mix and butter with a mixer set to low speed.
  8. Add water and peppermint extract and mix on low until combined.
  9. Beat on high speed for 30 seconds, scraping bowl as needed.
  10. To assemble cake, place first layer on plate or cake stand. Cover with a thin layer of frosting and a layer of white chocolate ganache (see "notes" below).
  11. Add second layer, frost, and add ganache.
  12. Add third layer and frost. Frost sides of cake. Drizzle a bit more ganache on top if desired.
  13. Other garnish ideas: crush candy canes in a large zip bag and press them into the sides of the cake. Melt white chocolate, then drizzle it onto waxed paper to form trees. When hardened, place trees on top of cake.
  14. Serve cake at room temperature or chilled.
Notes
For white chocolate ganache, pour 1 cup white chocolate chips into a heat-proof bowl. In a small saucepan, heat 1 cup heavy cream until steaming (but not boiling). Pour cream over white chocolate and stir until melted. Refrigerate ganache until needed.

Ways to Take a Cake Over the Top

-Coat the sides with crushed candy canes, crushed cookies, or sugar sprinkles

-Create chocolate flourishes, trees, or snowflakes using chocolate or white chocolate

-Serve the cake on a beautiful cake plate

-Drizzle ganache over the cake before serving

-Add a special garnish such as fresh raspberries or sugared cranberries

I chose to garnish my cake with crushed candy canes along the sides, white chocolate ganache in between the layers and on the top, and white chocolate trees on the top to give it a beautiful presentation!

This cake has a delicious homemade taste despite starting from a box mix and being so simple to throw together.  Combined with the beautiful garnishes, it’s the perfect recipe for holiday entertaining!

Penguin OREO Cookie Ball Pops

When I was in college, my friend and roommate Kristin introduced me to OREO Cookie Balls.  We used to buy the ingredients and make them in our dorm room for any occasion imaginable. Parties, weekends, breakups, exams, late nights… OREO cookie balls saw us through.

After college, OREO Cookie Balls were a staple at wedding showers and baby showers too.  My mom and I even made upwards of 400 of them for my wedding!  (Safe to say: I got pretty good at making them!)  Tad and I made quite a few one Christmas to give as gifts (we packaged them as “lumps of coal”).

As my children get older, I am excited for OREO Cookie Balls to be a part of our family’s traditions (around the holidays and at other times too!).  The regular OREO Cookie Balls are a classic, but I wanted to take it up a notch with a sweet surprise for my kids.

I was so excited to try this fun recipe for Penguin OREO Cookie Ball Pops!  My kids love penguins, so these were a perfect fit for us.

Adorable Penguin OREO Cookie Ball Pop treats to enjoy with friends and family!

Ingredients
  • 36 OREO Cookies, finely crushed
  • 1 pkg. (8 oz.) brick cream cheese, softened
  • 48 lollipop sticks
  • 4 pkg. (4 oz. each) semi-sweet baking chocolate, melted
  • 48 white candy coating wafers
  • 24 Mini OREO Bite Size Cookies, separated, cream removed and each cookie piece cut in half
  • mini candy button eyes
  • orange triangle candies
Instructions
  1. Mix cream cheese and OREO cookie crumbs until blended. Shape into 48 (1 inch) balls.
  2. Dip one end of each lollipop stick in small amount of chocolate; insert into center of ball. Place on waxed paper covered rimmed baking sheet. Freeze 10 minutes.
  3. Dip balls in remaining melted chocolate. Immediately place candy wafers on fronts of balls, then decorate with remaining ingredients to resemble penguins.
  4. Place on prepared pan. Refrigerate 1 hour or until firm.

-The easiest way to finely crush the OREO Cookies is to use a large food processor and pulse until they form crumbs. However, as I mentioned above, I used to make them in my dorm room without fancy tools.  Just put the OREO Cookies inside a gallon sized zip bag and crush them with a rolling pin.

-I always use my hands to combine the OREO Cookie crumbs with the cream cheese. It’s a little messy, but it’s the quickest and most effective way to get the job done!

-In order to cut the Mini OREO Cookies, separate the two halves, remove the cream, then use a sawing motion with a butter knife.

-If you don’t have button candies, you can make the eyes with dots of melted white chocolate. Let stand until firm, then add a drop of black decorating gel to each.

-You can make these treats without the lollipop sticks. Use two forks to roll the cookie balls in melted chocolate until evenly coated, then place balls in prepared pan and decorate as directed.

-Store these treats tightly covered in a container in the refrigerator. OREOCookieBalls6

Ingredients
  • 4 containers (5.3 oz. each) Yoplait vanilla Greek yogurt
  • fresh blueberries
  • fresh strawberries, sliced
  • fresh raspberries
Instructions
  1. Line a 9x9 pan or baking dish with parchment paper.
  2. Spread Yoplait vanilla Greek yogurt into pan in an even layer. Top with berries.
  3. Place in the freezer for at least 4 hours (overnight is fine), then remove from pan using the parchment paper to lift it out. Break bark into smaller pieces using a sharp knife.
