Ham, Spinach, & Tomato Frittata

Here’s a quick and easy recipe for you to try!  It works great for any meal, though it is “technically” a breakfast food.  It is delicious served alongside fresh pineapple!

This recipe is cooked in a cast iron skillet. If you don’t have one, you should definitely invest in one today!  They are much healthier to cook with, since no nasty Teflon is leaching into your food.  Source  Plus, as an added benefit of cooking in a cast iron skillet, your food absorbs some of the iron while cooking, which can help you get more (needed) iron in your diet!  Source 

Ham, Spinach, & Tomato Frittata

1 Tbsp. olive oil
6 eggs
1/4 cup milk
1/4 cup half & half
salt & pepper to taste
4 oz. mushrooms, sliced and sauted in butter (optional)
1/2 cup oven roasted tomatoes (see recipe below), or you can use fresh tomatoes
1 cup cubed (fully cooked) ham (we used leftover ham)
1 cup fresh spinach (loosely packed) and coarsely chopped
1 cup sharp white cheddar cheese (or your favorite cheese!)
a dash of paprika

Heat olive oil in a cast iron skillet (medium heat).  Preheat oven to 375 degrees.  In a mixing bowl, beat eggs, milk, half & half, salt, and pepper.  Pour egg mixture into hot cast iron skillet.  Add (no need to stir in) mushrooms, tomatoes, ham, spinach, and cheese.  Sprinkle top with a dash of paprika.  Immediately place skillet in hot oven and cook frittata for 15-20 minutes, or until knife inserted into center comes out clean.  Cut into 6 wedges and serve immediately.

There are many other ingredients that taste wonderful in frittatas!  Here are a few other ideas:

-sausage
-bacon
-roasted red peppers
-fresh bell peppers
-zucchini/summer squash
-cubed cooked potatoes
-onions
-artichoke hearts
-asparagus
-shredded carrots
-jalepeno peppers

How to Make Oven Roasted Tomatoes (delicious in MANY recipes!)
Cover a cookie sheet with aluminum foil. Cut fresh tomatoes into wedges and place in a single layer on pan. Drizzle with a little olive oil and toss some fresh minced garlic on them too. Sprinkle with salt and pepper. Bake at 350 degrees for 35-45 minutes, until tender and your whole house smells amazing. 🙂

Freezer Cooking Day (June): The Results

Today I spent the day freezer cooking! I am really thankful for all that I got accomplished today during times when Vera was napping or otherwise occupied. I feel pretty worn out, but satisfied with the work I was able to do. Here’s what I made:

–Spaghetti Sauce (4 containers – should be 4 meals + leftovers)
-Italian Hamburger Patties (2 – 1 meal)
-Adobo Hamburger Patties (2 – 1 meal)
-Whole-Wheat Hamburger Buns (8 rolls)
-Sweet BBQ Sauce for Salmon (1 meal)
-Cilantro & Black Bean Taco Meat (2 meals)
–Stir Fry Veggie/Sauce Kits (2 dinners + 2 lunches)
-Chimichuri Cilantro Sauce (4 servings to use with chicken)
-Mushroom Beef Stroganof (1 meal + leftovers?)
-Chimichangas (2-3 meals)
–Pizza Dough and Pizza Sauce (2 meals)
-Bacon/Egg Breakfast Cups (6 breakfasts for Tad)
-not pictured: Whole-Wheat Waffles (16+ waffles: 4 breakfasts for the three of us)

 

I guess that’s a total of 18 dinners/lunches and 10 breakfasts… 28 meals (or parts of meals) in all!

I’m too tired tonight to post any recipes, but if there are any specific ones you want, let me know and I’ll try to oblige this weekend!

Culinary Bucket List

Do you have a list of things you want to accomplish before you die?  I do… sort of!  These are things I want to learn how to do in the kitchen!  I really enjoy cooking for my family, and I love learning how to make new things and experiment with different techniques.  It’s not so much about specific recipes as it is about acquiring new skills.

I started this list a while ago, and as you can see, I have crossed a few things off.

Learn how to use a chef’s knife like the pros on TV do
Make marshmallows
Learn to cook salmon
Make hummus
Make a pie crust from scratch
Organize spice cabinet
Roast garlic
Make ice cream without an icecream maker
Learn how to make perfect hard boiled eggs
Make granola bars
Make Artisan bread
Make biscotti
Make bagels
Make babyfood
Learn how to make a consistently successful omelet
Make an authentic Caesar salad
Make really good chicken stock
Decorate a cake with fondant
Take a cake decorating class
Make real vanilla extract
Make truffles
Make applesauce
Learn how to can
Make croissants
Make crackers (I did this once but they weren’t great, so I’m going to try again)
Make graham crackers
Buy a candy thermometer
Buy an instant-read thermometer
Make mozzarella cheese
Learn to use a charcoal grill
Make pasta without a machine
Make fried rice
Make an incredible, to-die-for chocolate cheesecake
Try cooking spaghetti squash
Make pita bread
Make authentic gyros with lamb, tzatziki sauce, and homemade pitas
Make mousse
Make hamburger buns
Make some sort of braided bread
Learn to make an excellent white sauce/bechamel
Make alfredo sauce
Make a sourdough starter
Learn how to make good sourdough breads

Of course I will keep adding to this list!
