Menu… Tuesday

We are getting unpacked and settled into our new home! I feel like the kitchen is getting close to being in order, so I can start thinking about cooking again! My family is coming to spend Easter weekend with us, so we are very much looking forward to that. They are bringing a lot of food with them, which is quite a blessing!!

Breakfasts: cereal, oatmeal, muffins

Monday
Dinner: spaghetti, bread, salad

Tuesday
Lunch: leftovers
Dinner: chicken Kiev, baked potatoes, green beans

Wednesday
Lunch: sandwiches
Dinner: macaroni and beef

Thursday
Lunch: leftovers
Dinner: TBD (probably something from the freezer)

Friday
Lunch: soft tacos, all the fixin’s
Dinner: grilled meat, baked potatoes, tossed salad, Angel Rolls

Saturday
Lunch: chicken salad, croissants, Italian pasta salad, veggie platter, fresh fruit
Dinner: ham, fried potatoes, Caesar coleslaw, mixed veggies

Sunday (Easter)
Breakfast: egg-bacon souffle, toast, juice, coffee
Lunch: ham, cheesy potatoes, green beans, sugar-free raspberry jello salad, Angel Rolls, lemon pound cake
Dinner: (my family gone) leftovers!
I’m making a lot of different recipes this week (some new, some old) that I haven’t posted about before. I’ll try to take lots of pictures of what I make so I can post the recipes next week sometime! A lot of these are family favorites, so I’d love to share them with you!

Blueberry Muffin Bars

When Andrea first told me how she makes muffins like this instead of the traditional way, I wasn’t totally convinced that they would taste all that different! Well… I finally tried them this afternoon, and WOW! They are sooo good. They have a delicious crustiness to them (in a good way), and they are so fast (and cheap!) to whip up for a snack, breakfast, or even dessert. Also, I know I am not the only one out there who hates cleaning muffin tins!

Here’s how to make them (remember, this is Andrea’s kitchen brilliance, not mine!).

Blueberry Muffin Bars

2 pkgs. blueberry muffin mix (I used Martha White whole grain) – OR use 1 bigger box mix
1 cup milk (or what your mix calls for)

Preheat the oven to 425 degrees. Spray a cookie sheet (with edges!) with non-stick cooking spray. Mix up the batter and pour it into the pan. Spread the batter so it’s even. Bake until done. Edges will be a little crispy, center will be done (test with a toothpick), and top will be golden!

Yummy!

P.S. Obviously you can use other muffin mix varieties. We also love mixed berry, strawberry, and apple cinnamon and can’t wait to try them with this recipe.

Menu Monday

Sorry I’m posting so late today! We had our house inspection this afternoon (which took a looong time), and then we went grocery shopping. By the time we got home, it was time for dinner (well, past time…) and we just finished cleaning up from that!

Without further ado… here are our menus for the week.

Monday
lunch: ramen noodles and whole wheat bread
dinner: steaks cooked by Tad; oven fries; green beans in Italian dressing
(Note: The steaks were in our AFM box last month… otherwise we couldn’t afford steak! Also, the oven fries were part of the fruit from my recent freezer cooking day.)
Tuesday
lunch: roast beef & melted cheese subs; fruit (we bought a pineapple deeply on sale today!)
dinner: homemade spinach & chicken pizza; tossed salad; garlic bread
(Note: Whole Wheat Pizza crust mix already made & in the freezer!)

Wednesday
lunch: chicken tenders; tossed salad with mandarin oranges; fruit
dinner: baked ziti; garlic bread

Thursday
lunch: roast beef & melted cheese subs; veggies; fruit
dinner: hamburgers; oven fries; veggies
(Note: Hamburger patties and oven fries made & in the freezer!)

Friday
lunch: leftovers
dinner: pork roast; mashed potatoes; mixed vegetables

Saturday
lunch: leftovers
dinner: Italian meatballs; gravy; Angel Rolls; corn
(Note: Italian meatballs and Angel Rolls mix made & in the freezer!)

Sunday
lunch: creamy garlic pasta shells (mix)
dinner: tuna, pasta, & cheese meal
