Go-To Whole Wheat Waffles

When I was compiling recipes for this post on go-to whole grain recipes, I realized I had never blogged my favorite EVER waffle recipe!  Just this one, this one, and this one.  (All good, but not my favorite one!)

You can easily add mix-ins to this recipe, such as nuts, blueberries, lemon zest, chocolate chips, etc.  It’s a great starting point for creating waffles your family will love!

I’m starting to shop around for a new waffle iron, since ours only makes two at a time so it takes waaaay to long to make all the waffles for our family (my girls can EAT)!  Do you have a waffle iron (that makes 4 waffles or more) that you particularly love?

Go-To Whole Wheat Waffles
   adapted from here

3 cups whole wheat flour, freshly ground
1/2 cup sucanat
3 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
1 Tbsp. melted butter, plus more for waffle iron
3 eggs
1 1/2 tsp. vanilla
2 1/4 cups buttermilk, see note*

Grind wheat in the WonderMill.

Preheat waffle maker.

In a large mixing bowl, whisk together flour, sucanat, baking powder, baking soda, and salt.

In a smaller bowl, mix together 1 Tbsp. melted butter, eggs, vanilla, and buttermilk.

Add wet ingredients to dry ingredients and stir just until combined.

Grease waffle iron by brushing with melted butter (or you can use cooking spray).

Fill waffle iron with batter and cook according to manufacturer’s directions.  I like to underfill my waffle maker so the batter doesn’t leak down the edges!

*Note: Add 2 Tbsp. lemon juice to a glass measuring cup, then add enough milk to make 2 1/4 cups.  Allow to sit for 5 minutes, then use in recipe in place of buttermilk.

Makes 18 waffles

We like to top it with honey (or maple syrup) mixed with melted butter (equal parts) to help it go further!  It tastes amazing!

An Owl Party!

Did you know I have a facebook page for Feathers in Our Nest?  If you “like” the page, you’ll know about new posts as soon as they are posted!

Cordelia had such a fun time anticipating her owl birthday party the last few weeks!  She talked about it every day.

Me: CC, what kind of party are you going to have?
Cordelia: I havin’ a owl partay! A owl partay!
Vera: Owls are my favorite too!

We had the party on Saturday evening, and we were so glad that both sets of grandparents, two uncles, one aunt, and one cousin all came to help us celebrate!

I hardly took any pictures during the party (too busy playing hostess and nursing Jude!), but here are some I managed to get before things got too crazy (aka when the kids were all napping)!

Everyone got to put on owl temporary tattoos (in the milk glass bowl, above).

The kids had a special table with owl plates.

I had a lot of fun making an owl piñata!  It was almost too cute to beat with a stick.

Vera was quite excited about the party too!

My grandmother gave them these cute owl shirts and my mom made ruffled pants to match.  Adorable!

They really do love each other.

The party menu:  feta dip, pita chips, spinach artichoke dip, crackers, veggies, Caesar salad, rolls, cornbread, white chicken chili, minestrone soup, and chocolate cake!

Of course the birthday girl loved her chocolate cake!  I’ve made this cake/frosting recipe twice now and I think it’s a family favorite.  I’ll have to blog the recipe sometime!

We are so thankful for all of the family members who came to help us celebrate our sweet CC’s second birthday party!  It was such a fun party!

Cordelia’s Two Years Old!

Today our sweet Cordelia Mae turns two!

She is such a delight to be around, with her sweet smile, ever-growing vocabulary, and infectious giggle.

She is already making jokes and pretty much stealing the show at our house.  At church, the nursery workers say she is “hilarious”!

Cordelia is so kind to her sister and baby “brudder” and she is always quick to bring them a bear or blanket when they are crying.

“CC” as we often call her, is compassionate, loving, and affectionate.  I love her cuddles and kisses!  She still lets me rock her before bed.

Cordelia is fearless and always willing to try new things.

We often hold our breath for a second when she tumbles over (again), but she always bounces back up with a smile on her face!  What a toughie.

We are excited that Cordelia is already learning Scripture (she knows parts of 1 Cor. 13:4-8!) and songs rich in theology (like the Songs for Saplings catechism songs we are learning in family devotions).

Cordelia is absolutely a joy and we are so thankful she is our daughter!  God really blessed our family by giving her to us!

Happy second birthday, Cordelia!  We love you!
