Creamy Tomato Soup

I originally posted this recipe three years ago, but I decided it was time to repost and update it with better pictures!  We make this soup quite often for lunch (3-4 times a month usually).  It’s a favorite with Tad and also with the girls!

This soup is a snap to put together and it always turns out great!  I prefer to make it with cream, but if I don’t have any, milk works as well.  I never measure anything anymore because I make it so frequently!

Serves: 3-4
Ingredients
  • 1 large can (29 oz.) tomato sauce
  • 1 cup heavy whipping cream (this also works with half & half or whole milk, though it won't be quite as rich)
  • 1½ tsp. sucanat (or brown sugar)
  • 1 tsp. Italian seasoning
  • dash of hot sauce
  • ¼ tsp. salt
  • a few grinds of black pepper
  • Garnish options: chopped green onions, croutons, grilled cheese croutons, shredded cheese, etc.
Instructions
  1. In a saucepan over medium heat, combine all ingredients (except for garnish).
  2. Heat, but do not bring to a boil.
  3. Serve when warmed through.
  4. Top with garnishes as desired.

We like grilled cheese croutons as a garnish, which are exactly like they sound. Make a grilled cheese sandwich and cut it into cubes, then toss on top of the soup!

Perfect Salmon Patties

I’m always looking for new ways to used canned/foil pouches of salmon, since salmon is a super-food and I always seem to have some on hand in the pantry!  This is a quick meal to throw together, and the resulting patties are warm and comforting.

We enjoyed them on their own (so moist and flavorful!), but they would also be delicious served on buns!


Perfect Salmon Patties
    adapted from here

1/4 cup whole wheat flour, freshly ground
1/4 cup cornmeal, freshly ground
3 (5 oz. each) pouches wild caught salmon
1/4 cup minced onion
1 egg
3 Tbsp. mayonnaise
1/2 tsp. garlic powder
salt & pepper
2 Tbsp. oil for frying

Grind wheat and corn separately in the WonderMill.

In a medium-sized bowl, combine drained salmon, flour, cornmeal, onion, egg, mayonnaise, garlic powder, and a dash (each) of salt and pepper.  Stir well.  Form mixture into patties.

Heat oil in a frying pan (I prefer a eco-friendly non-stick pan).

Fry patties until golden brown on one side, then flip and cook the other side.

Serve warm, either alone or on a bun.

Makes 8-9 patties.

Easiest Mac ‘n’ Cheese Ever

I’ll start by saying this is NOT my original idea; I’ve seen it on Pinterest dozens of times (from various sites) and just decided to make it for the first time last week!  Homemade macaroni and cheese is so simple to make this way (3 ingredients and you don’t have to drain the pasta!), and is a great “emergency” lunch when it feels like there’s nothing else to make!  I like to serve it as a main dish with peas and whole wheat bread on the side, or as a side dish alongside meatloaf or something else comforting.

Easiest Mac ‘n’ Cheese Ever

2 cups milk
2 cups macaroni (or other pasta, such as mini shells)
2 cups shredded cheese (cheddar, monterey jack, colby, or a blend)

Cook the pasta in the milk over medium heat, being careful not to scorch the milk (stir frequently).  When pasta is done, remove from heat, and add the shredded cheese.  Stir until melted, then serve immediately!

*You adjust this to serve any amount of people… just use a 1-1-1 ratio of ingredients and it will work!
