The Best Brownies

Make these once and I’m convinced you’ll agree with me: these are the best brownies EVER. I just made a batch to send with the kids to camp, but I couldn’t resist keeping a few.The Best Brownies

1 1/2 cups flour
2/3 cup unsweetened cocoa powder
1 tsp. salt
1 tsp. baking powder
1 cup butter (2 sticks), softened
2 cups sugar
4 eggs
2 tsp. vanilla
1 cup chocolate chips (I like Hershey’s Special Dark)

Combine flour, cocoa powder, salt, and baking powder with a whisk (to remove any lumps) in a medium-sized mixing bowl. In a large mixing bowl, cream together butter, sugar, eggs, and vanilla. Add the flour mixture. (Batter will be light-colored and very thick.) Stir in chocolate chips by hand. (If you were going to add nuts, this would be the time… but I despise nuts in my brownies so I never add them!) Pour batter into a greased 13×9 pan. Bake for 30-35 minutes at 350 degrees.

Fondue for Two

Here’s a great Date Night idea… fondue for two! (I know… we’re really bringing back the ’70’s here!)

Let’s be honest… the real reason people go to the Melting Pot is for the amazing dessert fondue! We discovered we can make and enjoy our own chocolate fondue in the comfort of our own home. We decided that this will be a wonderful “Daddy and Mommy time” in the future after our children have gone to bed!

You can find chocolate fondue recipes in cookbooks and all over the internet, but here is the one we used last night.Fondue for Two

5 to 6 oz. dark chocolate, broken into small pieces
1/4 cup milk
1/2 tsp. butter
5 large marshmallows

Place chocolate and milk in fondue pot. Turn temperature dial to warm. Stirring constantly, add butter and marshmallows until melted.

While one spouse is making the fondue, the other spouse can be getting the “dippers” ready. Ideas include strawberries, blueberries, raspberries, bananas, marshmallows, cubed pound cake, graham crackers, tiny rice krispy treats, brownie bites, fancy cookies, and mini cheesecakes.

Chocolate Dipped Strawberries

As though you didn’t have enough ways to eat yummy spring strawberries, here’s another delicious option!
Chocolate Dipped Strawberries

dark chocolate (use chips or kisses)
strawberries
white chocolate, optional

Melt the dark chocolate a few seconds at a time in a microwave-safe bowl, stirring frequently. Dip washed (and dried) strawberries into melted chocolate. Place on a plate covered with wax paper and refrigerate until chocolate has hardened. If desired, drizzle with a little bit of white chocolate.

Just 48 calories per strawberry!
