Holiday Breakfast Ideas

Whether you have company in your home or not, it is fun to make holiday breakfasts special and delicious, while still allowing you to spend time with your family.

Here’s a list of some ideas for you!
– Breakfast Souffle (make with sausage or bacon)
– Bacon Muffins
– Buttermilk Biscuits
– Whole Wheat Pumpkin Bread
– Pumpkin Spice & Cranberry Orange Bagels (make ahead) and cream cheese
– Baked French Toast
– Cinnamon Rolls
– Quiche (this quiche recipe is similar to one we make)
– Yogurt and Granola Parfaits

Ways to Doctor a Muffin Mix

Since I was a kid, I have always loved the muffins made with Martha White muffin mixes! I still make muffins from a mix all the time, but I’ve come up with a few ways to “doctor” them up to make them special. One of the reasons I use the mixes is because they are so cheap ($.30-$.85 each). You can even buy the whole grain mixes for more of a healthy boost. These muffins freeze well and are perfect for a quick breakfast or snack!
Ways to Doctor a Muffin Mix

– Add 1 ripe banana (mashed) to a strawberry mix
– Add quick oats & a bit of brown sugar to the tops (before baking) of an apple cinnamon mix for an easy strudel-like topping
– Add 1 tsp. vanilla extract to the batter
– Substitute egg nog for the milk
– Add a handful of dried cranberries to a blueberry mix
– Add raisins to an apple cinnamon mix
– Add chocolate chips
– Add some lemon or orange zest
– Add your favorite chopped nuts (pecans are great!)
– Add some finely grated carrot to an apple cinnamon mix
– Make them like this (not really adding anything, just changing how they are baked)

Breakfast Souffle

I made this tasty dish for Easter Sunday breakfast. You put it together the night before so that all you have to do in the morning is bake it! Easy, right? The original recipe (from a Christian “camp” I volunteered at) served 30 people, so I’ve tried to slim it down considerably for you. I’ve made this enough times now that I don’t really have to measure, so all measurements are approximate! I prefer making this with sausage, but you can use bacon as well.

Breakfast Souffle

Brown mild sausage (Jimmy Dean is good) or bacon and drain. (As far as amounts, I would say probably 3/4 lb. of sausage or 6 strips of bacon.) Grease a 9×13 baking pan. Cube enough bread slices to generously cover bottom of pan. Place browned sausage or crumbled bacon over bread cubes.

Beat 8 eggs with hand mixer. Add 1/2 cup sour cream, 1 1/2 cups of milk, and salt and pepper to taste. Place 1 to 2 cups of shredded cheddar cheese over sausage/bacon in pan. Pour egg mixture over all.

Chill overnight.

Bake in a preheated oven (350 degrees) for 45-60 minutes uncovered, until egg is baked and top is golden brown. Serves 8 generously.
