Blue Ribbon Peach Cobbler

April 17, 2015 by Aliesha

Blue Ribbon Peach Cobbler | easy recipe for peach cobbler | delicious, fast, and company-worthy! | can make with fresh peaches or canned | yummy with ice cream too! | Feathers in Our Nest

In the summertime, it just doesn’t get better than fresh peaches, does it?  I just love a fresh, in-season, juicy peach!  I love to make this easy cobbler recipe with fresh peaches, but during other seasons, canned peaches are a great stand-in!

The first time I made this cobbler was for our County Fair night at the beach, which is why I gave it the name!

I recently made this peach cobbler for a church potluck, and when I went back for my dish, every bite of it was gone!  It’s definitely great for potlucks since it tastes good at room temperature.  I also love making it for my family.  It’s so easy to put together, yet there’s something so classic and homemade about it.  It would be great to serve for company too!

The recipe is written for an 8×8 pan, but I like to use a larger dish when I can so it doesn’t spill over.  If I do use an 8×8, I always put an old baking dish underneath it to catch any overflow/spills.

Perfectly yummy as is, this peach cobbler is also quite indulgent with a scoop of vanilla ice cream!

Week Twenty

April 14, 2015 by Aliesha

Week 20Well since it’s been… umm… four weeks since my last pregnancy update, I thought I’d go ahead and fill you in on how things are going!

Long story short, I am (I mean baby is) growing like crazy.  I all of a sudden have this huge baby bump!  Love it.  I’m still wearing non-maternity bottoms, but half of my tops are now maternity (mostly so people can tell I am pregnant… why else would I wear shirts with side rouching?).  I’m excited to get out all my dresses for later in the summer.

With the added weight in the front, I’m feeling a little off-balanced!  My back is hurting as I adjust, so I probably need to do some exercises to help with that.

Baby Apricot is moving lots and I enjoy those special times throughout the day when I feel him or her moving and kicking!

At our 18 week ultrasound appointment, we stood by our decision to wait until the birth to find out the gender.  Everything looked good on the ultrasound (healthy heart, brain, lungs, kidneys, etc.) and we got a great view of Apricot’s profile (sweet little lips!) and even a few waves.  Vera was fascinated by the ultrasound, but CC kept asking when the baby was coming home with us.  She’s still wrapping her mind around how long this process takes!

More and more each day I am grateful for the privilege to carry another child.  A healthy pregnancy just isn’t a “given,” but rather a gift.  I feel so thankful!
