Italian Pasta Salad

This is an easy recipe to just “throw together” when you need a quick side dish to complement a spring or summer meal. You can change it according to your tastes!
Italian Pasta Salad

whole grain pasta (penne, rigatoni, bowties, etc.)
zesty Italian dressing
grape/cherry tomatoes, halved
red onion, sliced
Parmesan cheese
basil and oregano (I used dried, but fresh would be great!)
optional: cucumbers, black olives, etc.

Cook pasta and allow to cool. Add additional ingredients and toss. Chill. Add more dressing just before serving so it’s not too dry.

Kindred Connection

Windy Poplars

It’s Kindred Connection Day (for the first time ever) at Windy Poplars. If you are joining me from KC, welcome! I hope you enjoy your visit at Feathers in Our Nest. To read more about Kindred Connection, go pay Kristin a little visit at Windy Poplars.

Here are the questions this week!

1. If you could describe your desired lifestyle in one word, what would it be?
Peaceful. I want our home to be filled with peace and harmony, reflecting the inner peace Christ has given us. I desire that my family would love being in our home because of the Peace that reigns here. I love for things to be “visually peaceful,” and while this is not always possible (life just happens!), I do want our home to be beautiful and welcoming.

2. What style of home is your “House of Dreams”?
The one we’re living in! It’s a big, beautiful old house with lots of charm. While we have some house projects on our to-do list, this house is really everything we’ve wanted! We have a big front porch, columns, crown molding, high ceilings, a partially fenced-in back yard, flowering trees and shrubs, and old door knobs/keyholes on all the doors. It could be just because it is the first house we’ve owned, but we’re pretty much in love!

3. If you could live in a fictional story/movie, which would it be and why?
I know everyone else has been saying this, but definitely Anne of Green Gables! I’m an “Anne-girl” at heart, and I love everything about the books and the movies. I’ve always thought I’d fit in better in a time when ladies wore dresses all the time (and hats to church picnics!) and thought puffed sleeves were high fashion. I also love the beauty of Prince Edward Island… sometime I’d love to visit there!

4. Do you prefer coffee or tea? Favorite kind?
Definitely coffee! Since being pregnant I stick to mostly decaf (except for the very occasional half a cup), but before that I loved getting espresso drinks like caramel frappes and iced lattes. There was a coffee shop in Lynchburg that served the BEST coffee drinks. We loved going there to read and study! There is just something about a great coffee shop that refreshes and calms me. Currently, my favorite kind of coffee is decaf with a little french vanilla creamer.

5. Share the last sweet/romantic thing your hubby did for you.
This morning I was checking my email before breakfast, and my hubby came back from running an errand. He told me to get dressed because we were going to the candy store! We went downtown (if you can call it that in our little town!) to a sweet shop that we’ve been wanting to visit and were delighted to find they serve breakfast treats as well as baked goods and candy. Tad got me a blueberry muffin and a cup of coffee (decaf, of course). Then, we went to our little local “country store” to buy boiled peanuts and local honey (to help with allergies – the pollen is SO bad here). It was a beautiful, romantic morning!
