Oatmeal Whole Wheat Bread

I found this recipe over at Amy’s and I have to say it is one of the easiest bread recipes I’ve made (except for Artisan Bread, of course)!  It’s a quick bread, so there is no kneading involved.  It’s very healthy too, since it’s loaded with good things like whole wheat flour, oats, coconut oil, and honey.  It is hearty and delicious and is perfect by itself or as a complement to a nice soup.

Oatmeal Whole Wheat Bread

1 cup oats
1 1/2 cups whole wheat flour (I added more too)
2 tsp. baking powder
1/2 tsp. salt
1 1/2 Tbsp. honey
1 Tbsp. oil (I used coconut oil*)
1 cup milk

Preheat oven to 450 degrees.  Process oats in a food processor, mill, or blender.  Combine with the other dry ingredients in a mixing bowl.  Mix the honey, oil, and milk together and then add to the dry ingredients.  Stir; add more flour if needed (I added another 1/2 cup).  Form into a moist ball of dough and place on a greased baking sheet.  Sprinkle with additional oats if desired.  Bake for 20 minutes or until loaf sounds “hollow” when thumped (yep, that’s the technical terminology).
*Coconut oil is a solid under 77 degrees, so you will need to melt it in the microwave before using it in this recipe.

    I might just have to give that a try! You should try the Challah recipe at Tammy’s Recipes. AWESOME! Definitely not the healthiest bread, but very tasty.

    Mmmm, that sounds sooo good! I’ve been looking for some good whole wheat bread recipes so this is definitely a must try. 🙂

    I made your Sesame Chicken a couple of weeks ago. Oh my, it was delicious! I took your advice the first time I made it and cut the sugar to 3/4 cup. I made it again tonight and cut the sugar to 1/2 cup and it was as good if not better without all of the sugar.

    I also served it over plain bagged cole slaw instead of rice. It gave it a little crunch and made it a little more healthy.

    What a super easy meal to make if you are in a hurry.
