Freezer Cooking?

I’m debating about trying my hand at a “freezer cooking day.” I’m still not ready to call it Once a Month Cooking (OAMC), simply because I’m not sure that I could really cook enough in one day to feed us for a month! At least not until I become more experienced at this.

I read this really encouraging post over at Money Saving Mom this morning, and it made me think a little differently about freezer cooking. Instead of picturing myself making 30 casseroles, I’m now seeing myself making parts of meals (that will ultimately save time!), or simple recipes, such as marinated chicken breasts, hamburger patties, spaghetti sauce, etc.

What about you? Have you ever tried OAMC? Do you have any great recipes or tips to share?

    I am doing a little bit of freezer cooking today! But I usually don’t really make meals ahead, more components of meals, like the author mentioned in the post. I have a chicken in the crockpot for dinner. I’ll shred the leftovers and freeze for another meal (pot pie or chicken and rice casserole). Then I plan to use the chicken carcass to make chicken broth overnight. I’m also making muffins and I’ll freeze some (if there are any left!). I cooked some dried beans in my crockpot on Saturday, and froze those to make black bean enchiladas. Occasionally, I will make a casserole or chicken pot pie to freeze, but our freezer is not big enough to hold 30 meals! I’m like you–I just can’t see doing that many meals at once. But I do like to make some things ahead to make meal prep simpler.

    Ive precooked a lot of chicken breast before and cut up veggies like onions and such, then freeze that.. so all i have to do is throw it in a pan and make something.. or add extra spice… but with my kitchen im just not sure id have the sanity to do it lol.

    One day maybe… It does help to have an extra freezer.. we stock up on raw meat a lot but i make up the meals as we go usually.

    All that you are learning in this area will make your life so much smoother and the meals for your family so much yummier and more nutritious. God is gracing you with so much!! (AND you are taking advantage of it all–KUDOS to you!!)
