Confetti Salsa

I created this recipe last week in an effort to induce labor by eating spicy foods (no, it’s not working yet…)! This salsa is KICKIN’ HOT, so be warned! (I’m a girl who refuses to buy mild salsa, so believe me when I tell you this is kickin’!) Also, make sure you wear gloves when you cut up the peppers. I didn’t know I was supposed to do this, and I actually got legit chemical burns on my fingers. Not so good. Feel free to adapt this recipe to suit your taste buds!

Confetti Salsa (aka, Get This Baby Out NOW Salsa)
1 jalapeno pepper, seeded and finely chopped
1 serrano pepper, seeded and finely chopped
1 red fresno pepper, seeded and finely chopped
1 orange Scotch bonnet pepper (not sure if that’s definitely what it was), seeded and finely chopped
1 yellow Scotch bonnet pepper (not sure if that’s definitely what it was), seeded and finely chopped
a few slices of white onion, finely chopped
a few slices of red onion, finely chopped
3 cloves garlic, minced (more if you like)
black pepper
salt
garlic powder
1/2 can black beans, drained and rinsed
1 can diced tomatoes, drained
canned corn, optional

Combine peppers, onion, and garlic. Season with pepper, salt, and garlic powder. Add beans and diced tomatoes (and corn, if desired). Taste and season again if necessary. Chill in fridge (overnight is best), then serve with tortilla chips.Look at all those beautiful colors! Enjoy!

    This salsa is so pretty! We are growing tons of hot peppers this year so I will def. try this one out. I just made a super hot peach salsa this weekend. I am a huge salsa fan!

    I agree. That salsa is so pretty! I just found out I can’t eat some of the hot peppers. (WAH) but I’m still making stuff with peppers for my husband. We love them!

    It is a gorgeous salsa. I bet it is hot if you used 2 scotch bonnets. Wow! I love hot, the little ones not so much – make two kinds, I guess!

    Just want to let you know that I’m praying for you and hoping your baby comes soon! I know those last days can be hard when you’re so ready to be done with pregnancy and so eager to meet your baby. I know the Lord will send your little one at the perfect moment, salsa or no salsa! 🙂
