Spiralize All the Things!

Lately I’ve really gotten into spiralizing!  Have you heard of this?  I’m late to the party, definitely, but I’m enjoying it none the less!

Family members and friends have been spiralizing their veggies for a while, but I decided to take the plunge when Liz sent me a video of her spiralizer making zucchini zoodles (zucchini + noodles = zoodles).  You can find small, hand-held spiralizers (like this one), but I decided to go with a larger, counter-top model so that I could do harder veggies like sweet potatoes and broccoli stems.

It’s so easy to use!  This is the spiralizer I have.  You just put your zucchini (or squash or sweet potato or whatever) in the spiralizer (first cut off the ends and peel when applicable), then use the hand crank to easily make looooooonng noodles!  (We’re talking six feet long sometimes!)  The kids love helping me turn the handle and watch the zoodles come out.

I usually spiralize a few large zucchini at the beginning of the week so I have them ready to use when I want them.  I like to lightly saute them in a bit of olive oil with some red onions.  Then, I either eat them on their own, or in place of pasta or rice.

Spiralized sweet potatoes are a GAME CHANGER.  They are completely delicious when sauteed in a cast iron skillet with some olive oil and shallots.  They are a perfect side dish that way!  But… I have a favorite way of using them.

After sauteing the sweet potatoes until mostly tender, I top them with mozzarella cheese, onions, peppers, chicken sausage, and basil to make the most delicious gluten-free pizza you’ve ever tasted!  When I tried this combo the first time, I wasn’t sure about the sweet potato and cheese pairing, but it is wonderful.  I now make this dish every week on pizza night (I eat some regular pizza and some of this, and Theodore fills up on this one).

This spiralizer has three different blade options (the extras are stored in the base), and it’s relatively easy to clean.

-yellow squash
-white potatoes
-broccoli stems
-onions
-beets
-cucumbers
-and more!
