We added a new member to our family yesterday! Tad and I have been wanting to get a cat together since before we were married! One of our favorite places to go in Lynchburg (where we went to school) was the pet store so we could look at/hold cute animals! Because we didn't own the place where we were living, we weren't able to get one until this week.

We adopted The Abominable Snow Kitty from some friends of ours. He is just precious! He is all white (save his pink ears and nose) and has one blue eye and one amber/green eye. He is just under a year old and was formerly an outdoor-only cat. He really loves our house (especially all the carpet... the green shag is his favorite!) and has learned to use his litter box (thankful for that!). He follows us around the house and loves being around people! He is very cuddly and will sit in your lap if you sit still long enough. We think he has a bit of a cold right now (you can see the drainage around his eyes) but we're hoping it will heal on its own soon.
As you can see from these pictures of him lying on our bed, we are not spoiling him at all!

Oreo Truffles

I have made these truffles so many times! They are absolutely irresistible and people always love them. I learned the recipe from my college roommate, Kristin, and we made them together a whole lot last year. I made them for Tad's and my wedding (about 400 of them!) and recently made them for Kristin's bridal shower. I promise they'll be a hit at your next social gathering!

Oreo Truffles

1 package Oreos (I usually use double-stuff)
1 8 oz. package cream cheese, softened slightly (but not too soft!!)
white chocolate morsels

Finely crush Oreos in a large zip bag. The crumbs should be very fine with no large chunks. Pour crumbs into a bowl and scrape cream out of inside of bag into bowl as well. Add block of cream cheese. Mix with your hands until a smooth, black "dough" forms. Form into balls (large marble size) and place on a plate to chill in fridge. Melt white chocolate morsels in the microwave and drizzle (or pipe, using a pastry bag) over the tops of the chilled Oreo balls. Chill and enjoy!

We are getting unpacked and settled into our new home! I feel like the kitchen is getting close to being in order, so I can start thinking about cooking again! My family is coming to spend Easter weekend with us, so we are very much looking forward to that. They are bringing a lot of food with them, which is quite a blessing!!

I'm making a lot of different recipes this week (some new, some old) that I haven't posted about before. I'll try to take lots of pictures of what I make so I can post the recipes next week sometime! A lot of these are family favorites, so I'd love to share them with you!

Sorry I didn't post this yesterday, but we were pretty busy! To compare with last week's photo, click here.

I feel like I've really "popped out" this week! I have had some strangers look at me when I've been out in public... and I think they were trying to figure out if I was pregnant or not.

Our baby girl is doing great. She continues to be very active and I get excited every time I get to feel her moving around and kicking!

We are looking forward to meeting her in August!

Moving Update

We kind of look like this right now... haha!

We had a big moving day on Wednesday and were out of town on Thursday and most of Friday. We spent last night in OUR HOUSE for the first time. We love it!!! We are so thankful to God for providing such an amazing place for us to live.

Life will continue to be crazy for the next few days as we finish moving out of and cleaning up our former residence. We don't have internet at the new house yet, so I may not be blogging as much until that gets set up next week.

We're rejoicing in God's faithfulness to us!

Menu Monday

Our menus this week are VERY SIMPLE to help counteract the crazy-busyness that comes with closing, packing, moving, and all the "normal" stuff we still have going on this week! So... no really exciting recipes this time around... sorry. (If it were just me, I would eat tossed salads and cereal all week! haha.)

On the positive side is we'll have a low grocery bill (again) this week!

Breakfasts: oatmeal, cereal, eggs

Lunches: deli meat sandwiches, burritos, PB&J, leftovers, etc.
Sides: apples, pickles, hard-boiled eggs, etc.

We are closing on our house on Tuesday(!), moving all week, and having our BIG moving day on Saturday. If all goes well, we should be spending Saturday night at our new house!

Church Picnic

We enjoyed a wonderful afternoon at our church's picnic at a local park! It was so nice to spend time with our church family. The weather was great and kids (and youth and adults!) enjoyed flying kites, blowing bubbles, biking, throwing a football, skate boarding, and of course, eating yummy picnic food. We hope we get to do it again soon!

We are five months pregnant today! So excited for this milestone.

I read that our baby girl is now the size of a cantaloupe (why is this word not spelled like antelope?), but I don't believe it. Do you think there is cantaloupe-sized baby in me? haha. Anyway, she is VERY active and I love it! It is SO special every single time I feel her move or kick.

I am so thankful that I have been feeling GREAT lately. Thank you to everyone who gave me advice about lower back pain. It has been much better this week (not sure what exactly made it better, since I've tried pretty much every suggestion!).

Oh, and I would like to give a shout out to Andrea, who just gave birth to her third baby boy, Owen, today at 11:45am! She persevered through WEEKS of early labor and gave birth today without an epidural. I'm so proud of her!

A Peek at Our New House

Well.... we're not moving this weekend. Closing got pushed to next week, so we'll be moving after that! We're thankful we at least have a definite date and time now!

Thought you might like to see a few pictures of our house. I'm not happy with how any of the inside shots turned out (too dark, crooked, awkward, etc.), so you'll have to settle for these right now.

We're going over to the house to clean today, and I might get a few more pictures then.

The house is in a nice neighborhood in a small town. We love the charm that this 90-year-old "bungalow" has, and look forward to updating it while still maintaining the character and history of this beautiful house. The housing market in our area is VERY good for buyers right now, and there is no way we could have afforded a house like this back in our hometowns in VA. It's just a great market down here (come live here too!). We love the big front porch and look forward to entertaining (and relaxing in big white rocking chairs) on it this spring and summer.
There is a nice yard in the back that is mostly fenced-in. We would like to eventually fence it in completely so our kiddos can play back there safely.
We're seeing signs of spring all around the house. Camellias, forsythias, and flowering quince are blooming, and we were happy to see a full hedge of azaleas that should bloom later this spring.

The house has 11 rooms in all. While many of them could be used for several purposes, here is what we are planning on doing with them all (at this point).

- kitchen
- family room
- master bathroom
- master bedroom
- office
- guest bathroom
- guest bedroom
- (upstairs) nursery
- (upstairs) library
- (upstairs) spare oom*

The house needs LOTS of love and care, as it is very old. We're looking forward to fixing it up and turning it into a HOME! We like to joke and say that this is probably the biggest house we will ever live in with the fewest amount of children!

We are thankful to God for providing this house for us and for granting us peace during the looooong process of buying our first house (we've been in the process since August 2009).

Once we've settled in a bit (and found a couch...haha), we'd love for our friends and family to come visit us and stay in our guest room (or spare oom)!
This room is our "Spare Oom." (This furniture is coming with the house.)

* "Spare Oom" is a reference to the Chronicles of Narnia, but we may instead go with calling it our "Spare Room," a reference to Anne of Green Gables. What do you think?

Shopping for Inspiration

Last Saturday Tad and I were able to spend some time in Raleigh. I LOVE Raleigh, mainly, and I know this sounds shallow, for the shopping. They have absolutely everything! Saturday we were shopping for some wedding gifts for friends' weddings we're attending this summer, but mainly we were shopping for inspiration. By this I mean, we were looking around some of our favorite stores and snagging ideas that we can use for our home (and save $$ in the process!).

Our first stop was Williams-Sonoma. If you've never been there, WS is a kitchen store that is filled with the most wonderful kitchen gadgets you'll ever see. They have great ideas for packaging (homemade) mixes (bread, cake, scones, etc.) to make nice gifts for friends. Their website has lots of recipes you can try at home. We loved these little birds nests (warning: nests were everywhere [I'm so ahead of my time], so be prepared to see more pictures in this post!).Next up was Crate and Barrel. I seriously could spend 45 minutes staring at their wall of kitchen gadgets. They have everything from spatulas, honey dippers, bottle stoppers, thermometers, and more. (They also carry some things we like to make fun of, such as cake testers [we use a toothpick!], tea bag squeezers [what?!], and avocado slicers [how many times a year could you possibly use this?].) We love looking at their selection of espresso cups, glassware, coffee mugs, and seasonal offerings. We thought these little egg cups were too cute (not that we'd have much of a use for them... but adorable they are)!
We also loved these little square dishes, even though they don't really match our decor/serving style. But wouldn't they be cute for a party?Our trip to Pottery Barn definitely gave us the most inspiration for home decor. Between what we saw in the store, the pages we tabbed in their catalog, and what we found on their website, we have lots of pretty pictures to share!!

First up: using antique keys as wall decor. A couple of years ago, I purchased a small lot of vintage keys on ebay, with the idea that I would use them somehow one day. I thought about framing them in individual frames, but I like the idea of hanging them on nails and grouping them all together as well. We loved the hanging mason jars they were selling to add ambiance to outdoor festivities. But at $8 a pop, we realized we could make our own for much less! Mason jars can easily be found at Goodwill and other thrift shops, and you may just have a few lying around your house as well! Twist some heavy gauge wire to form a handle, fill with some sand or rocks and candle, and you're done! We might make some to hang from our big front porch since we plan on doing a lot of entertaining there this summer.If you know me well, you know I also have a (not-so) hidden love for apothecary jars. We used several to decorate our wedding reception, and I have been looking forward to using them to decorate our home as well! We loved seeing them used at Pottery Barn to hold everything from bath salts, cotton balls, and soap to rubber bands, paper clips and rulers. They also look great when filled with fruit or fresh flowers! These can be purchased at a lot of different locations (and I even snagged some small ones at Goodwill!), so buy a few and experiment with using them in every room.













Does this pillow look like it was made just for me? Yes, I think so!! Any ideas on how to re-create one? (I can sew a pillow... I just don't know how to get the writing on it like that.) It would be SO perfect for our living room!
We loved these little nest placecard holders! Thought they wouldn't be to hard to make myself with some wire.
I really think that Pottery Barn can make displaying toilet paper look elegant! Case in point: here is a collection of towels, q-tips, sponges, and more all corralled under the sink in beautiful baskets and jars. So elegant! It's all about presentation... even in the bathroom!
Last but not least, I would like to say how much I loved these drapes. I love how clean and simple they look (they don't take over the spotlight in the room), while still adding something so refined to the overall look of the room. We would love to find lots of inexpensive panels that look like these to use in our home!
Oh, one more thing we should mention. We also stopped at Trader Joe's for the first time on the way home. I'm a little bit envious of those of you who live near one... their produce prices are GREAT! I also love that they give little sample cups of coffee for you to enjoy while you shop.

Tuna Salad Plates

This is a quick & pretty lunch that "jazzes up" an old favorite: tuna salad sandwiches. Plated salads look so pretty and are a great idea for when you're having company over for lunch. There may be some tuna haters out there (my husband is one--don't worry, he was gone for lunch today), but you can use this same principle with chicken salad, noodle salads, and more.

Tuna Salad Plates with Garlic Toast Points

Mix tuna with black pepper, dill weed, and garlic powder. (I try not to use mayo in my tuna salad to be healthier, but you can add it if you want.) Arrange romaine lettuce leaves on plates. Scoop tuna salad onto lettuce leaves. Add pickles and other vegetables on the plate as desired. Some ideas: cucumbers, carrot sticks, tomato wedges, celery, "angel-ed" eggs, etc. Toast whole wheat bread and top with butter and garlic powder. Cut into triangles and arrange on the plates. Voila!

Meals this week are SIMPLE, quick, and mostly coming from the freezer or the pantry! (Because of this, my shopping list has less than ten items on it. Yay!) I planned simple meals this week because we are (Lord willing) MOVING on Saturday! Keep praying that Saturday will be the day.

Lunch: tuna salad plate (Tad gone)
Dinner: tacos, tortilla chips, salsa, corn, fresh pineapple

Tuesday
Lunch: leftover pork roast OR frozen burritos
Dinner: Italian meatballs, rice, gravy, green beans (we didn't have these last week)

Lunch: roast beef sandwiches, pickles, fruit
Dinner: hamburgers, oven fries, salad

Thursday
Lunch: ham & cheese sandwich melts, canned peaches
Dinner: Italian meatloaf, baked potatoes, lima beans

Dinner: whole wheat pizza with ham and spinach

Decorative Accents

Last week I spent some time making decorative hemp ball accents for our future living room. I love the look of natural accents (birds' nests, natural fibers, plants, etc.), and I've been eying decorative accents similar to these for a while. Making them was fun, easy, and more inexpensive than purchasing them would have been. The tutorial came from Make it and Love it. She painted some of hers, which looks fabulous. I might do that once our living room colors are definitely decided.I also would like to find a shallow basket to use for displaying them (thrift shop?), since the one in the photos is my fruit basket!

Pregnancy Lower Back Pain

This post is absolutely not meant as a complaint... but as a desire to get advice from other moms who have experienced this. As I said in my week 19 post, I have been experiencing a lot of lower back pain. It was the worst it has ever been last night. If you've also experienced this, do you mind answering a few questions for me?

-Did you do certain things that aggravated the pain more? (I'm wearing flat shoes, sleeping on my side, trying to have good posture, etc., but if there are other things I may be doing to cause this, I want to know.)

-Did you use heat? Cold? Alternate both?

-Was it worse on one side? Is that normal? (Mine is only on the right side.)

-Did you take pain reliever?

-Was it a sign for you that your belly was about to "pop out"? (I think that might be it for me.)

-Did massages help?

-Did you do stretches? If so, what kind?

-Do you have any other advice for things I can do?

Week Nineteen

I really did not feel like taking a picture tonight, but I did anyway! Figured I would regret it if I didn't. Click here to compare with last week's photo.

Our baby is growing and developing, for which we are very thankful.

I've been feeling great overall, with the exception of some back pain. If any of you have any ideas for me to alleviate the lower back pain, I'll take it! But I really can't complain. I'll take back pain over nausea any day!

I feel our baby girl moving almost every day now. Very exciting!

Blueberry Muffin Bars

When Andrea first told me how she makes muffins like this instead of the traditional way, I wasn't totally convinced that they would taste all that different! Well... I finally tried them this afternoon, and WOW! They are sooo good. They have a delicious crustiness to them (in a good way), and they are so fast (and cheap!) to whip up for a snack, breakfast, or even dessert. Also, I know I am not the only one out there who hates cleaning muffin tins!

Here's how to make them (remember, this is Andrea's kitchen brilliance, not mine!).

Blueberry Muffin Bars

2 pkgs. blueberry muffin mix (I used Martha White whole grain) - OR use 1 bigger box mix
1 cup milk (or what your mix calls for)

Preheat the oven to 425 degrees. Spray a cookie sheet (with edges!) with non-stick cooking spray. Mix up the batter and pour it into the pan. Spread the batter so it's even. Bake until done. Edges will be a little crispy, center will be done (test with a toothpick), and top will be golden!

Yummy!

P.S. Obviously you can use other muffin mix varieties. We also love mixed berry, strawberry, and apple cinnamon and can't wait to try them with this recipe.
